    Ingredients (सामग्री) :
    2 kg Chopped Tomato (कटा हुआ टमाटर)
    ½ Beetroot (चुकंदर)
    3 Red Resham Patti Dry Red Chillies or Fresh Red Chillies (रेशम पट्टी सूखी लाल मिर्च या ताजी लाल मिर्च)
    1 Chopped Onion (कटा हुआ प्याज)
    6 Cloves of Garlic (लहसुन की कलियां)
    2-Inch Ginger (अदरक)
    1 Star Anise (चक्र फूल)
    2 Cloves (लौंग)
    2 Small Sticks of Cinnamon (दालचीनी)
    3-4 Black Peppercorns (काली मिर्च)
    1 Bay Leaf (तेजपत्ता)
    ¾ Cup Vinegar (सिरका)
    150 gm Sugar (चीनी)
    1 tbsp Red Chilli Powder (लाल मिर्च पाउडर)
    Salt to taste (स्वादानुसार नमक)
    Method :
    1. Prep Ingredients:
    Wash and chop tomatoes, beetroot, onions, garlic, and ginger.
    2. Cook Everything:
    In a pressure cooker, add the chopped ingredients, red chilies (dry or fresh), and a spice pouch (potli) made by tying dry spices in a muslin cloth.
    Add water, mix well, and pressure cook for 3 whistles.
    3. Blend and Strain:
    Remove the spice pouch, blend the cooked mixture, and strain it to remove seeds and lumps.
    4. Thicken the Ketchup:
    Cook the strained mixture in a pan. Add salt, red chili powder, sugar, and vinegar. Simmer until thick.
    5. Store:
    Cool completely, then store in clean, dry, airtight bottles.
