    Sharing here the tomato ketchup recipe that you can easily follow and make Tomato Ketchup at home. This homemade tomato ketchup is as good as any packaged tomato ketchup you can get from any brand.

    Recipe :
    Tomatoes Ketchup
    Preparation Time: 15 minutes
    Cooking Time: 20 minutes
    Makes: 900g Approx.
    Ingredients:
    1 kg tomatoes
    5 cloves
    1 bay leaf
    1 cinnamon stick
    1/2 teaspoon chile flakes
    1 1/4 teaspoon salt
    1/2 cup vinegar
    100g sugar
    1 onion peeled and chopped
    1 tsp Kashmiri red chili powder
    6 Garlic Clove diced
    1” Ginger
    Cheesecloth
    Method:
    Prepare a square single layer of cheesecloth that will fit all the spices with room to fold and secure the contents.
    Place spices, Fold closed and secure.
    In a medium stock pot place tomatoes, salt, onion, garlic and spice packet. Cook over medium heat until tomatoes are soft and onions are translucent and limp (about 30 minutes).
    Remove and discard spice packet. Puree the sauce.
    Strain the ketchup through a fine mesh strainer back into the cooking pot.
    Add the sugar, vinegar and cook over medium-low heat for an additional 20-30 minutes until thickened to your preference.
    Add ½ tsp Sodium Benzoate dissolved in a tbsp of warm water and mix in.
    Store in a sealed glass container.

    You forgot to mention one Class 1 preservative which many people use = Hing. Both during cooking and later sprinkled on top of cooked item before closing the lid.

      Hing is not a preservative. It adds flavour to the product. It is used in all types of dhal recipes to prevent gastric and acidity problems.

      @@geethamuthukrishnan5653 Let us agree to disagree. You are entitled to your opinion and so am I (based on observation of cooking of many ladies from Udupi- Mlore incl mother, wife, sisters. )
      I am 68, male, from Udupi - Mangalore and we use hing for preserving FOR EXAMPLE tender mango pickle (midi upinkayi). It stops fungus from forming at the top of the bottle filled with pickle. And in other cases

    Thanks for this. I tried it and as with all the receipts, the end product is super. In fact with the potli technique I think the home made version shows a much better aroma and flavor than most branded product. I make saltless version and it tastes great. Have also tried your cheese and that is now a regular at my house.

    Thanks for explaining the type of preservatives and all the tips like not to pressure cook. The potli method👍. This is how we were taught by our elders way back in 70's. I was wondering why nobody is using that method. 👏👏to you for following that. I would say this is the authentic method of making ketchup.

      Sodium benzoate is a preservative that prevents the ketchup from spoiling and you can keep it for months.
      Or you can keep it refrigerated for a week.
