    To help prevent unsealed jars, keep hot jars closer together and wrap them in a towel overnight.

    My mom use to put a small x with the knife on the tomatoes at the bottom so that after they are blanched they are easier to peel

      I’ve tried that but, if you’re doing a lot of tomatoes, it takes more time than it saves.

      Thank you Charles!! Yes, I agree!! Unfortunately with my work schedule and stuff Jeni does a lot of this stuff on her own. So I really like the times we get to do it together. And it seems so much easier as a team and not solo.

    Tighten lids WITH FINGERTIPS ONLY. It is tight enough when you cannot tighten it with your fingertips any more.

    It looked like you cranked the ring down tight before the water bath. Finger tight only...air has to escape, so when you pull them out, it creates the vacuum. Video’s 2 years old, so I’m sure you already mastered those details by now, but for any other budding canners out there - finger-tight only, before the water bath!

    What do you do with the water at the bottom of the jar when you're ready to use the tomatoes?

    You guys do such a wonderful job! You might want to look at the deseeding attachment for your kitchen aide. Makes quick work of getting seeds out of berries and for tomato juice. It works with parts of your meat grinder.

    I LOVE how you two always tackle the farmstead chores together. (Otherwise, I'm afraid Mike would hurt himself he gets so excited. ; )

      In all honesty, Jeni gets stuck with a ton of stuff. But when we can, we do like tackle stuff together. It is much more pleasant working together .... or at least actually gives a chance to talk LOL!!

    Citrus Acid needs to be added to raise the PH level in the tomatoes because she is water bathing them. With Tomatoes I pressure can them to get them hotter. Make sure you always use what the ball book tells you. - Jeff

      Pratt Family Homestead - Canning is just on of those things you need to do, but safety is a must. I have thrown out many of things I just thought was going bad, or I figured I would never eat. 2 - 3 years is my limit right now. If you are using canning and preserving to store the food you grew last year it is not bad.
      By the way this is the first year I did pickles and Mike you pickle video gave me hope to do them. I am down to 4 1/2 gal jars, they are great and everyone at work loves them too. Thanks for the help " Steal sharpening Steal" you guys keep up all moving ahead on our road to self reliance. - Jeff

    Try putting your tomatoes in a hot oven instead of hot water, the flavor is better you can use a cake pan it work very good

    I like real life canning videos. In my opinion, it's ok to include the ping sound people need to listen for. Those romas canned up really good! Blessings.

    P.S. I have pig fat sitting on my counter waiting to be rendered into lard too! Never ending stuff to do, right?

      Just tested out my new meat grinder attachment for the Kitchen Aid with that pig fat. Worked great!! Kept that fat practically frozen when I ran it through. Hmmm ... just donned on me .... I consider that meat grinder attachment mine, but the Kitchen Aid Jeni's LOL!!

    I've never cold packed before, it was nice to see it done . I didn't have enough to do tomatoes this year but I'm planning on doing applesauce.

    Great job you two! You make it look so easy. I am not 100% sure but think it might be the name Grace that makes them a slow eater. If we make it to next years hang out we will need to have Grace and our Grace have a eat off for the best slowest eater. It would be like watching a turtle race. Lol

    Great video you two! LOL I just uploaded a dehydrated tomato paste video. I know how you guys feel, my tomatoes are still coming in this late in the season. Its Oct 7th & I am still harvesting tomatoes. XOXO Happy Canning

    tomatoes process 45 min not 1 hr. and 45Been canning tomatoes for about 35 years,

      We follow the ball book to the "T". And the way we are doing it the book says 90 minutes. So that is what we do. Thank you very much for watching!!

    Great job you guys! You may of had a slight flare in the lid brim that caused it not to seal, that has happened to me canning so check that lid 😉😉👍👍👍🇺🇸

    I use to can tomatoes for hours. I was reading in one on the Ball blue books about pressure canning. It's been awhile since I've looked but I think quarts can for some thing like 25 minutes. Saves sooooo much time.
    I just love to watch canning videos! Happy Canning!

      We also use the pressure canner for a lot things. I think we figured by the time all the pressure was right, it cooked, and then let it cool down and open ....... there really wasn't much time difference. Oh well, we will have to give that a try as well!! Thank you.

    Love canning but citric acid makes your Tomato's taste terrible I will never use that stuff ever again

      Thank you. I asked Jeni about this. She said she used lemon juice on a batch and really didn't care for it at all. Me, I just eat what's in front of me :) LOL - Mike

      I totally understand I just wanted you to know my experience with citric acid I just can't stand what it did to my Tomato's I feel it wrecked mine I was so mad after all the work we put into it it's funny I'm 54 and used to help my mother with canning as a kid and she never used anything in her Tomato's and would have them on the shelf for years and none of us ever died from it but now a days seems everyone is freaked out with this safety sally stuff thanks to Ball Books.........But hey as long as you like the end result that's what it's all about love the videos keep doing what you do and God bless.

    Love your s l o w eater! My Bro would whine for what seemed hours...or worse...gag! I'd take that million gigawatt smile ANY day! When it comes time to use your tomato powder look up recipes for pizza popcorn...Italian Seasoning, Parmesan, Garlic Salt, Tomato Powder = YUM!
