I can help you with what went wrong with the beef being dry !!!
1) Pan must be MUCH hotter to seal in beef moisture
2) if any beef chicken or fish is too close to its neighbor, the juices are wicked out into pan and either evaporated off (meat is dry) or steam the meat instead of sauteing (meat doesn't caramelize, sweet crust) .... SOoooo you got to keep em separated (like the song) by either using a bigger pan (preferred method) OR by cooking the beef in several batches (pain in the butt method). But if pan is very hot then this helps.
3) sauce should be prepared in same pan only after meat is cooked by doing it on very high heat for a very brief time OR remove the beef, prepare and reduce liquid out of sauce (by rapidly stirring on super high heat) and then re-add meat.
4) stir-fry veggies separately then add to meat and sauce and give a few quick stirs
