“Solar Eclipse” Deep Dish Pizza

  • Unabashedly thick. Unrelentingly cheesy. Homemade dough and pizza sauce combine with sausage, pepperoni, onion, peppers, and cheese - tons of it - for a deep skillet bake. A work of craftsmanship fitting for a solar eclipse! Just don’t call it a “casserole," at least not until you're in the totality.
    Dough:
    1 packet active dry yeast
    ¾ cup warm water
    2 cups all-purpose flour (will need more for flouring skillet before baking)
    2-3 tbsp olive oil (will need more for storing during rising process and for greasing skillet with flour before baking)
    1 ½ tbsp dried rosemary (divided - 1 tbsp at start; remainder before final kneading)
    1 tbsp honey
    **Add cornmeal for crispier crust; see note below.**
    Pizza Sauce:
    20 oz tomato sauce
    7-8 oz tomato paste
    2 tbsp dried oregano
    2 tbsp Italian seasoning
    ½ tsp dried basil
    ½ tsp garlic salt
    ½ tsp garlic powder
    ½ tsp onion powder
    ¼ tsp ground black pepper
    Pizza Filling/Toppings:
    1 lb hot or mild Italian link sausage
    ¼ lb fresh pepperoni
    1 yellow onion
    1 green bell pepper
    1 jalapeno or serrano pepper
    2-3 sprigs fresh sage (for sautéing with sausage)
    2 tbsp fresh parsley (divided - 1 ½ tbsp in pie; remainder as garnish near end of bake)
    8 oz mozzarella (cut in to 1” thick cubes)
    2-4 oz pepper jack (cut in to 1” thick cubes; add more mozzarella instead if preferred)
    2-4 oz shredded mozzarella (for top)
    2-4 oz freshly grated parmesan (for top)
    2 tbsp olive oil
    Equipment:
    Stand mixer (recommended)
    Kneading hook attachment
    10” skillet for pizza
    12" skillet for cooking filling
    Rolling pin
    Pie scoop
    **NOTE: Add cornmeal for a crispier crust. 1/3 cup with initial cup of flour for dough. Add light dusting of cornmeal to skillet with oil greasing before baking.**
