    Ingredients:
    2 cups Poha (flattened rice)
    1/2 cup Peanuts (roasted and unsalted)
    1/4 cup Cashews (roasted and unsalted)
    1/4 cup Curry Leaves (dried)
    2 tablespoons Cooking Oil
    1 teaspoon Mustard Seeds
    1 teaspoon Cumin Seeds
    1 medium Onion, finely chopped
    1 inch Ginger, grated
    1 Green Chili, chopped (adjust for spice)
    1/2 teaspoon Turmeric Powder
    1 teaspoon Red Chili Powder (adjust for spice)
    1 teaspoon Coriander Powder
    1/2 teaspoon Garam Masala Powder
    Salt to taste
    Chopped Coriander Leaves (for garnish)
    Instructions:
    Dry Roast the Poha: In a large pan or kadai over medium heat, dry roast the poha until it becomes slightly golden brown and crispy. Keep stirring occasionally to prevent burning. This will take about 5-7 minutes. Remove the roasted poha from the pan and set it aside.
    Tempering Time: Heat oil in the same pan over medium heat. Add the mustard seeds and cumin seeds. Let them splutter for a few seconds.
    Aromatics Party: Add the chopped onion, grated ginger, and green chili. Saute for a minute or two, until the onions are softened and translucent.
