- Sabudana Tokri Chaat is a delightful Indian snack where crispy, deep-fried sabudana (tapioca pearls) is shaped into a basket or "tokri" and filled with a variety of tangy and flavorful ingredients. The sabudana basket is typically crunchy and golden, while the filling includes ingredients like boiled potatoes, tangy tamarind chutney, spicy green chutney, fresh yogurt, and garnishes like pomegranate seeds, coriander This chaat offers a perfect blend of sweet, sour, and spicy flavors with a unique texture contrast.

Ingredients Quantity
Hot water as required
Tapioca pearl 1 ½ cup
Cumin seeds 1 ½ tbsp
Peanuts ¼ cup
Potato boiled 1 no
Ginger chopped 1 inch
Green chilli chopped 3-4 no
Cumin powder roasted 1 tsp
Black pepper crushed 1 tsp
Black salt 1 tsp
Oil for frying
Fresh coriander 1 cup
Mint leaves ¼ cup
Green chilli 3-4 no
Cumin powder 1 tsp
Black pepper crushed ½ tsp
Black salt 1 tsp
Ginger chopped 1 tsp
Water as required
Sugar 1 tbsp
Potato boiled 1 no
Water 1 cup
Sugar 3 tbsp
Cumin powder 1 tsp
Black pepper crushed 1 tsp
Rock salt 1 tsp
Dry mango powder 1 tsp
Red chilli powder ½ tsp
Curd 1 cup
Sugar 1 ½ tbsp
Pomegranate for garnish
Method
1.Rinse the sabudana well and soak it in hot water for half hours until soft. Drain completely.
2. Place a kadai on a medium flame and add the cumin seeds roast until golden brown.
3.Now put the roasted cumin seeds in a mortar & pestle grind them.
4.In that kadai add peanuts and roast until golden brown.
5.Now peel the outer cover of the roasted peanuts with the help of a hand towel.
6.Now put the peeled peanuts in mortar & pestle coarsely crush well.
7.Place a kadai on medium flame and heat oil.
8.Take soaked sabudana in a bowl and add boiled potato, chopped ginger, chopped green chilli,
roasted cumin powder, crushed black pepper, black salt and roasted peanuts mix well.
9.Take a mixer jar and add fresh coriander, mint leaves, green chilli, cumin powder, crushed black
pepper, black salt, chopped ginger, sugar and water. Grind a smooth paste.
10.Now take a ladle and apply some oil in it and add the sabudana mixture towards the back side.
11.With your fingers press and make an even layer of the sabudana mixture all around the ladle.
12.Fry till the tokri are crisp and light golden.
13.Take a boiled potato and cut them in a cubes. Then fry until golden brown.
14.Place a kadai in a medium flame and add water, sugar, roasted cumin powder, crushed black
pepper, black salt and red chilli powder boil them well.
15.Take a mixing bowl and add curd and sugar mix well.
16.In a bowl add black salt, green chutney and sweet chutney mix well.
17.Take a serving plate and add curd, green chutney and sweet chutney in a bottom.
