    You have not truly had a caramel until you've had a homemade soft caramel. These treats are nothing like anything you can buy at the store! They're rich and buttery with a good soft chew. You'll be the ultimate Christmas candy maker with these, and for good reason!

    INGREDIENTS⁠

    - 2 cups heavy cream⁠
    - 2 1/4 cups granulated sugar⁠
    - 6 tbsp unsalted butter⁠
    - 1 1/4 cups light corn syrup⁠
    - 1/2 tsp salt⁠
    - 1 tsp vanilla extract⁠

    INSTRUCTIONS⁠

    Grease a 9×13 baking sheet pan well with vegetable oil. Line pan with parchment paper and grease paper as well. Set aside.⁠

    In a 4-quart heavy-bottomed saucepan, bring cream, sugar, butter, and corn syrup to a boil. Continue to boil until 248°F is reached on a candy or thermometer. Swirl pan every so often to evenly heat.⁠

    When the temperature reaches 248°F, remove from heat and stir in salt and vanilla. Immediately pour into prepared pan.⁠

    Cool 6-8 hours or up to 24 hours to allow caramel to set up.⁠

    Use parchment sling to remove caramels from pan. Remove caramels from parchment and cut with a large sharp knife. The caramels are slightly sticky, so to keep the shape and keep from sticking to each other, individually wrap in parchment papers or wax paper.⁠

    For salted caramels:⁠

    Let caramels cool 30 minutes then sprinkle 3-4 tablespoons flaky sea salt over caramels. Finish cooling and cut.

    I wish I had a dollar for every Carmel we wrapped when we were kids. Very similar recipe and my mom would make a chocolate Carmel by adding cocoa powder (1/4 cup) at the beginning. So fun to see! We also bought a pizza knife to help with the cutting.

    Just made your caramels with my son. Such an easy recipe. Have to say there was some on the spoon and my son put it on a saucer in the fridge to cool so he could sample. I think this will be a must every year. We added a cup and a half chopped pecans just before we poured into the greased pan. Thanks K.W. 💜

      It's a 9x13 baking sheet pan. That lip on the side is important so it doesn't go all over the countertop as its cooling. Enjoy!

    Going to make this in the morning. I usually bring my sugars and corn syrup upto 310 and then add warmed cream and vanilla after and then bring up to 252.

    Caleb! Do you stir the pot during the cooking process. I know you would to mix ingredients but how about when melted and coming up to temp? I never see you stir during that part. Thanks!

      I use my instant read thermometer to mix it around. It acts as double duty since it mixes it, but also reads the temperature at the same time.

    Caleb i think Tate and Lyles golden syrup would work as it a converted sugar syrup too but is sugar not corn.

    Dumb question…..since I love caramel, but for the past year, I have an allergy to cows milk.
    Can I use plant base cream instead?
    Will it change the consistency of the caramel?

      Yes you can, I use(d) almond milk for a traditional caramel. Works great

    I was VERY Glad to see that you did not add Brown Sugar to your Caramel Recipe. Brown Sugar seems to be the "Thing" that people are adding to Caramels these days, but what they DONT Understand is that White Cane Sugar, makes a Caramel, where as Brown Sugar makes Butterscotch...a totally different type of Chewy Candy. Yes, still a Caramel, but when people name their candy....CARAMELS....And they have placed brown sugar into the recipe, it makes me slap my head....HA! That is because they made Butterscotch, NOT Caramel. Anywhoo....I was Very HAPPY To see somebody who knew what they are doing and made CARAMELS....Without Brown Sugar. Again, I am FINE If they want to add brown sugar, but dont call it a Caramel....call it Butterscotch Chews....or call it Butterscotch Caramels....because their IS A Huge Difference. How do I know? Well, I am retired now, but I am a Professional Caramel Maker, sold my Caramels all over America. So ya, I know what I am talking about. It was totally refreshing to see somebody make CARAMELS And Call them CARAMELS....Have a Great Day Wyse Guide!!!

    This is a fantastic base recipe. That being said I had a bob ross incident and the happy accident rewarded me with far better caramels.
    As the recipe sits, there is too much cream content. This amount of cream never allows the caramel the ability to set.
    Use 2c of corn syrup in lieu of 1 1/4 cup.

      Sweetened condensed milk in place of cream makes the process go faster and the caramels set better.

      Joe Pona my recipe is 2 sticks of butter a pound of brown sugar 1 can sweetened condensed milk and1 cup corn syrup. And lots of love.

    Yes there is an alternative to corn syrup. GLUCOSE SYRUP.
    In Australia you cant buy corn syrup so we use GLUCOSE syrup if we're making an American recipe.
    We cant buy quite a few ingredients you guys use, our food isn't as processed as yours, sorry but its true
