Medium if you order in the middle the cooking of the meat will either fall into Medium rare or Medium well if it's not cooked to Medium which are both perfectly fine for a steak. I used to order Medium Well but too often you'd just get well done steak. So I dropped to Medium and now no matter how the steak comes out its usually good.

i used to eat well done steaks most of my life just because thats how it was always cooked growing up, but in the past 5 years i switched to medium after trying it. maybe in a couple more years ill give medium rare a try.

that owner seemed so chill, and yeah the video did definitely seem more polished and set up for sure. idk if i just haven’t watched enough, but it seemed like this video of beards was pre-emptively prepared
His US tour was solo but I’m pretty sure he hires those guys to help when across the pond
He has been using a couple camera guys and an editor for some videos recently
I believe he mostly calls ahead for these bigger challenges, I think he drove about 4 hours for this challenge, so you wouldn’t want to rock up unannounced only to find they didn’t have the meat available. Most places he goes to are spur of the moment and you can see the looks on the faces of staff; this owner definitely knew what he was in for and played up for the video, which is smart to be honest, a ton of new challengers (and failures) will inevitably be spurred on to give it a shot.
A lot of business owners don’t like professional eaters doing their challenges. (Free food). So small contact between a heavy eater and the business is accounted for as a sense of respect.
Sometimes Beard films with a crew and that's the difference between his "normal" filming style - I LOVE THEM BOTH!!!!
I order Medium because I find many places under-cook the steak, so I end up with a perfect Med Rare

@CastledMallard depends on the cut for me anyways if it's a fatty steak I prefer medium so the fat renders more leaner cuts medium rare to rare

Adam gets the steak well-done because with a SLAB of meat like that, most places don't cook it all the way through even when they try, as you see here. So The more you ask for them to cook it, the more likely the center is, somewhat, cooked @timthetatman
I used to be a fan of rare but after watching food science videos if you got a medium or a medium you start incorporate more smells from the steak Into the experience, smell plays a big part into the over all flavor of a meal.

Rare for steak, I personally love using Tri-Tip Steak, add some wasabi on the side and some kosher salt. Best meal ever.

I'm a chef for a French restaurant in Kansas City Missouri. I cut my own beef and cook it in house. It's all depends on the cut of the steak. A filet mignon rare , a Kansas City strip medium. A ribeye I love medium rare.

Medium rare is my preference, however it also depends on the cut and quality of meat. A different internal temp can change texture and flavor a lot.
Most of my life I preferred medium-well steak, but my wife has gotten me to appreciate medium-rare by spoiling me with some really good steaks over the the years.

Depends on the cut of meat. Tenderloin/fillet I want it blue-rare but with a really nice sear, picanha: medium rare, rib eye: medium (too much interconnecting tissue just doesn’t breakdown properly below medium), sirloin/ny strip: med rare (fat needs to be rendered properly), flat iron: rare (very lean), flank: rare if tenderised properly.
I eat and cook a lot of meat, different cuts work better at different temperatures. The cut in this video did not look like a super tender piece, the way it was cooked through was probably a touch under medium and that’s pretty good to be honest.
This is a cut that would benefit from reverse searing until around medium to med-well. Temperature probe it, 54 Celsius, put in an oven at 65-70 celsius for an hour or two then finish over charcoal.

The most important part of the convo are other deciding factors. Cook method.. so gas or electric.. pan sear or grill.. sous vide or roasted.. so many methods.. also size and cut of steak are equally impirtant.. choice or prime also matters. A better marble and fat content allows a much better char and fat render allowing a better crust while maintaining tenderness, even when more on the well side.
For fathers day i grilled myself a 4 lb steak.. after searing and crusting in a high heat low volume grill (700 degrees farenheit but the outside of the steak coated in seasoned butter and bacon fat to allow flame up faster.) I then turned off the grill and let rest in the grill until hest dissipated to 300 degrees.. then rested for 10 minutes indoors. Perfect medium. The big thick cuts i prefer a medium with a long rest for better flavor. Thinner cuts or less fat.. fast high heat pan sear in butter bath.
Burger medium if made from freshly ground butchered beef. Medium well if made from store bought ground beef.

For me some cuts of steak can be a little better if they are a medium or medium well but if I'm going for something like a filet or ribeye, it's medium rare or medium for me.

Tim we have a challenge like this here in Texas in Amarillo it’s a 72oz steak with side and it’s free if you eat it within a set time so for you it’s a light snack
