    There are people requesting about matcha flavoured cake. Unfortunately, I couldn’t find any matcha anywhere here last year. Finally, I got my hands on some matcha powder. So here you go, hope you enjoy the video.
    I find it 10 grams of matcha powder is good enough for this quantity of ingredients, otherwise it will taste bitter. If you still want to add more matcha powder to give more flavour, then you can increase to 15 gr. and cut down the flour by 10 gr.
    About how to frost a mini cake I decided to add that in at the end of the video, simply because I don’t think I can eat the whole cake alone. So I gathered what is available at home and put together a frosting tutorial for you guys. Be creative and happy baking everyone.

    Michael, I made this cake for a sushi party for dessert. Rave reviews and the sponge was perfect! I filled the layers with lemon curd and topped it with toasted meringue and coconut. PERFECT! Thank you for your wonderful recipes. I use them all the time :)

    My wife loves yr simple recipe and easy to get ingredients. She even uses yr recipe to bake a banana, a mango sponge cake. Only set back was the frosting as creams and cheese are so expensive in our plc. Thank you for sharing yr love of baking wt us. God bless and be wt you always.

    If I use 7 inch round cake pan, how much ingredients do I use. Could I just follow your cotton cake recipe and just add matcha accordingly to your recipe

    Another good result! Halved the proportions for my 18cm pan. Sponge is beautiful, but I gotta work better on making it rise more!

    Hi, can I use cake flour for this recipe? And, is fine sugar also caster sugar?
    Update: I tried to make this today but not successful. The egg whites was all so watery no matter what. It just could not 'firm' up. What could be the problem. Please reply. Thanks.

    Dear Michael, I have 2 questions : (1) Before you add the vegetable oil, you have added matcha water, correct? What is the proportion of this matcha powder and water? (2) Can I put crushed walnut or almond in this cake? If can, when is the correct timing to put? Thank you for your kind advice.

    Beautiful cake! What kind of frosting did you use? I love whipped cream frosting (whipping cream with powdered sugar) but they don’t hold up for long. I always wonder how bakeries make their whipped cream so stiff and hold up so well for piping cakes.

      Bare in mind we are baking at home, the products that bakers use are always have extra something added in it. Let not go there because it will be a big discussion.
      If you want your whipped cream stay and hold longer, try mixing whipping cream and mascarpone. That is what I use for my birthday cake video. If you need to know how I whipped the cream, just watch one of my birthday cake video.

    Hi Michael,
    If I have already took out the cake from the oven and discovered the middle of the cake was not cooked yet. Can I put the cake back re-baked?
    I did try it but didn't work.

      No, you shouldn't do that when baking chiffon or sponge cake. At least next time you will know how long you need to bake the cake. Good luck and success.

    Thank you for sharing this matcha sponge cake recipe. I really like all the cake recipes you shared. I tried to make match chiffon cake before however the cake always turn brown instead of green after baking. How come? Another problem is the cake always shrink after taking out from the oven, but yours doesn't. Did you leave it in the oven for a little while after you turn off the oven? Did you turn it upside down while cooling?

      I don't know your recipe, so can't give any advise on that. For my recipe, as long you follow the instructions and pay attention to the folding and the consistency of the batter, it should be ok. Most of all no altering the recipe and it has to weigh by metrics measurement for accuracy.
      No I didn't leave the cake in the oven to cool down. I took it out of the oven and the top of the cake has a little dome shape like. Once it cooled down the dome will shrink and become flat. All this you can actually see it in the video.

      You could cover your cake with a foil baking paper and remove it after 60mins and continue baking for 20mins.

      You have to cut down the matcha powder from 10 gr. to 5 gr.
      Otherwise your cake will be bitter. Wish you a happy graduation day.

    Hi Michael, most of your sponge cake recipes use oil instead butter, is there any particular reason that you used oil? Btw, I shared your video (chocolate sponge cake) to my friend, she liked it and did a good job with her cake.

      Not every recipe you need butter. For instant this is a green tea sponge, I want it to smell like green tea not butter.
