- Buko pie is a Filipino classic pie. There are also many variations - some make them with milk and some don't. Whatever version you make, what is important is that the buko must be fresh and the tenderness of the buko just right.
I start with a basic pie crust using shortening. Butter makes the best tasting crust but they are difficult to handle for beginners because butter melts at body temperature. Shortening is not as tasty but the crust is flaky and they are easier to handle. You can also use a mix of shortening and butter. I do not mind using just shortening because my buko pie filling is full of buko-goodness!
I prefer to scrape the buko with a spoon instead of shredding it with a buko shredder because you can taste more of the buko goodness.
Be sure you cool the pie thoroughly before you remove them from the pie plate so the crust will not break. I usually cool mine overnight in the refrigerator. You can also use disposable pie plates so you do not need to unmold them.

Use butter instead and use cold water. Same amount.

Keep it refrigerated or you can freeze it well wrapped in plastic or foil. It will last for a week in the ref. and 2 months in the freezer. Thanks for watching.

If wala’y pie tin with removable na bottom, I usually just place 2 long strips of aluminum foil at the base of the tin then cut-out parchment paper on top of them. This usually works for more delicate pie crusts and pies that have runnier fillings… Thank you kaayo, Chef Rose for this recipe. I’ll surely give this a try on my next day off. You can use same recipe, just add 2 whole eggs. Replace buko water with milk. Reduce sugar if you are using macapuno preserves.

Room temperature 24 hours. Refrigerated 3 - 4 days. Frozen 2 weeks.

Maam can I cook without oven?
You can cook it on a stove top at low heat covered but it top won't brown as much. Look will not be the same though.

Depends on the size and the amount of meat in the buko you buy. I think I used 4 pcs buko for this recipe.
