Chocolate Fudge Brownies Recipe and Ingredients:
4 large free-range eggs
3 teaspoons of instant coffee, dissolved in boiling water
100 g (0.42 cups) of chopped hazelnuts, toasted in a dry frying pan
225 g (0.95 cups) of Kerrygold butter, or any butter
1 teaspoon of vanilla extract
200 g (0.85 cups) of caster sugar, or regular sugar
225 g (0.95 cups) of dark chocolate
100 g (0.42 cups) of plain flour with 1 teaspoon of baking powder mixed in
50 g (0.21 cups) of cocoa powder
Oven Preheating:
180°C (fan-assisted)
350°F
Gas mark 4
Baking:
Place on the middle shelf of the oven
Bake for 20 to 25 minutes
Ganache Topping:
100 g (0.42 cups) of cocoa chocolate
30 g (0.13 cups) of butter
75 mL of double cream, or heavy cream
50 g (0.21 cups) of icing sugar

I’ve had to make myself a nice Greek cup of tea with a little bit of cinnamon and a clove and get myself prepared to write back to you. Hi Maria, my parents came from a village near Larnaca in Cyprus. They came to London in the late fifties to work here to make their life better and worked very hard in a fish and chip shop. They were both lovely parents and I loved them very much. I have been with Nicholai for 33 years and have been married for six years and he is one very capable man excellent at cooking Greek food very kind and generous. I couldn’t have done any better. His family are amazing exactly like him, kind and very generous and humble, I also have two very beautiful sisters Eleni and Maria. Life is not perfect but it’s as good as it gets replying to your comments is a great pleasure and always great to hear from you long may it continue my dear friend. ❤️ my parents motto was just be a good person. That’s all you need to worry about.

Scooter did look a bit annoyed but I think he might have not appreciated Nicholai saying he is getting on in years. My mom used to have an expression "he doesn't have the living of a dog"...well, some dogs (and cats too) have an enviable life. Don't work too hard! I am doing well and enjoying life myself. Hi Alice I’m glad you’re enjoying your life as for the brownies. That was the least of my problems when I got to the salon. I had a very big leak and the washing machine broke two days later. Hey ho as you know they say it comes in threes I don’t know what the third one was. Scooter is very happy. That’s all that matters. Nicholai did another video today. Hope all goes well. Love that place you had your tea, I’ve an old galvanised bin lying around so planning to grow something in it now after seeing your banana plant. Love your recipes, they look delicious but I’d be the size of a house if I made them 😋
