Hello Imamu! I didn't know japoneese people would eat swiss chard! We have a lot of it in France, here's a little recipe for the stems : boil them just like you did with a bit of salt. When cooked, mix them with some white sauce (the one you use to bake your creamy seafood croquettes is perfect :)) then, grill that in the oven with some mozzarella cheese on the top to make a gratin, it's really delicious ^^ thank you for this new video, take care!!
About the Swiss chard turning brown: Adding vinegar to greens will destroy the chlorophyll and make the greens turn brown. Adding baking soda will make the greens stay green and even makes them brighter!
Ah, likely the swiss chard with pretty color that you wanted is called "rainbow swiss chard" -- it is it's own variety of swiss chard, and you'll see it has brightly colored stems before cooking. Taste is the same though, so you didn't miss much. ☺More often, people grow it themselves or find at farmers markets; I don't often see it in grocery stores (but I am in the U.S.).
It is so much fun to cook with young sous chefs. At our pre-school, the kids us help prepare bento at least twice a week. They grow their own rainbow chard in the school garden for the rice balls.
If you can find halloumi cheese, try that and wrap with ham or sausage. It doesn't melt and tastes lovely fried, better than before it is fried when it mostly tastes like salt.

The family time at the end was so sweet! I still cherish the times my mom lets me help her in the kitchen, oh and you might like the fried dumpling with some cheese or minced beef fillings,(or both) in brazil we have a bigger version with various fillings but the concept is basically the same!

Imamu - most colourful veggies like purple beans, purple/black tomatoes, colourful chards and even blueberries and purple sweet potatoes have compounds called anthocyanins. These colourful compounds break down when boiled or cooked, so the beans turn green usually and chard usually goes a bit brown. Purple tomatoes have a similar muddy colour when cooked. 😅 They still taste great!

Swiss chard often turns brown when boiled in an aluminum pan due to some chemical reactions! I reccomend using a different pan or using red Swiss chard since the browning doesn't end up too bad. Imamu makes the cutest bentos! ❤

I usually see it in lettuce mixtures meant for salads.

Also it's firm enough to make as healthier fries! And goes well with eggs and ham!
Maybe paneer cheese too? It may be a bit more fragile, I cook it as cubes about 1.5cm across.
