    The amount of effort on the cheesecake crust design, when it's just going to be covered in cheesecake, absolutely baffles me. I was already confused as to why you'd use your favorite design on the section that gets covered up, but then to spend so long finessing it too!!

    I love that you associate cinnamon with Autumn (Fall) whilst most of Europe associates it with Winter, in particular Christmas. We bought a tin of cinnamon biscuits from IKEA a couple of weeks ago all ready to come out on the biscuit/sweets table next week

      Yeah, I live in Mexico and it's the same for us. I bake some cinnamon cookies for Christmas every year, like, the scent is associated with winter and Christmas. At last for me and my family and friends.

      Pumpkin spice isnt a thing here, that's why, I guess. We eat pumpkins just baked in the oven, without spices (maybe just adding honey). What they call "pumpkin spice" there, is basically gingerbread spice here.

    Just a suggestion. Next time you make cookie dough, wrap it in plastic wrap, like a sausage. Then put it in the fridge. Once it has rested, you can cut it into disks.

      It does sound way easier BUT in some recipes (like the ones that I use) the cookie dough is way too sticky for that to work (and also mine doesn't require chilling them)

      I portion the cookies out before "aging/refrigerating/freezing" the cookie dough. And that way it had time for the flavors to meld/marinate and it's easier to scoop or roll while it's still room temp.

    You should do a truffle episode. I've seen recipes using cream cheese plus cookies or cake mixes as a base, then adding in candies, nuts, and fruit for variety. There are the sweetened condensed milk truffles and the baked truffles...so many possibilities!

    I just watched a video on the original Toll House chocolate chip cookies & it included baking soda mixed in water (old school technique, I guess?), so that may be where that came from (for Donna Kelce's recipe).

      I adapted the “best chocolate chip cookies” recipe from AllRecipes a long time ago (their site was much different- and MUCH MUCH better back then!) and it uses the same baking soda in water step. I did tweak things a bit, but I didn’t do anything to that step and they truly are the best chocolate chip cookies! I assume it’s about getting a more even distribution of a fairly small amount of baking soda. But since it works so well, I honestly don’t care too much.

    I wonder if for the snow globe drink you could first freeze the rosemary in an ice cube tray partially filled, freeze it, and then put the ice cube in the wine glass with a bit of water (not too much to make the cube float) and freeze it again. Seems like a lot of work for one drink but if you are doing multiple it may work better than trying to stand them all up!

      Freeze them in the ice cube tray upside-down so when you put it in the glass your "tree" is hanging down from the ice!

    The baking soda in hot water moment is something I have been swearing by for like ten years! It's my go to secret to my chocolate chip cookies and makes some kind of magical difference. Chemists help me understand!

      The baking soda in water is the way they used to do cookies. The original toll house cookie recipe had this step.

    Try tying a tread around the Rosemary and tying the tread around a chopstick and lay it across the top of the glass to hold it in place like you do when making candles to hold the wicks in place.

    My favorite layered recipe is Chocolate Chip Cheesecake Bars! Take ½ a tray of chocolate chip cookie dough and with floured fingers press it into a 8 or 9 in pan. Your cheesecake layer is 8oz cream cheese, ½ cup of sugar, 1 egg & and a tsp vanilla extract. Blend that up and pour over the cookie dough. This can be optional, break up the remaining cookie dough and sprinkle over top Or what I did for a Large family was use an 8x10 and put all of the cookie dough down and double the cheesecake measurements!
    Bake for 35 to 40 min until the cheesecake is firm to the touch.

    I saw the sprig that you freeze and it is supposed to look like a a Christmas tree in drinks, they had cranberry’s in the glass and looked great, gave the “tree” stability and I think it would have enough weight to no do your tree float and flip lol

    Cinnamon is very festive season related,where I am from (England) as it's in so many of our Christmas/holliday foods like Christmas cake, mince pies, christmas pudding, mulled wine, spced cider. I love cinnamon with chocolate so ill give those cookies a go. Great video, Happy hollidays.

    I make a similar no bake cheesecake but you can add in so many different flavors. I actually prefer the no bake version to baked. I like to use a biscoff base.

    I wonder if the rosemary would work a little better with frozen syrup of some flavour, but probably not. And I wonder if swapping the cinnamon with espresso powder would de-confuse it, apart from leaving the cinnamon out.
    And I don't understand all the work with the cookies when you can't see them at the end. I would just pour chocolate over them and then have a giant cookie disk, or even get it out as it is.

    A couple of things.. First of all I love your videos! 2nd you can make the rosemary one by using all the stick (probably the correct word. Sorry English is not my first language) and when it freezes cut it the length you want. And 3rd the next time you make a non bake cheesecake take one cream cheese out and replace it with Greek yogurt. It will make it way fluffier. Not as heavy to the flavor. More "fresh". But choose a good yogurt. Not a runny one. If you can only find a runny one use some gelatine to make it sturdy. I use on every cheesecake I make (it doesn't change the flavor)

    I'm not sure if you are aware of this, but there are cameras that have two card slots and can record on both cards simultaneously so if one corrupts or something else happens to one, you have a backup. For example the Panasonic Lumix S5ii has two card slots.

    For the rosemary one I just had an idea, why not poke it through a citrus slice (grapefruit / orange / lime) so it has a stable base to sink into and give it a nice citrus touch as well ?

    You could try putting a bit of cookie dough under the "blanket". 😊 As I understand it, chocolate with cinnamon is a Mexican thing. So that might be what Donna was going for. But if I were making them I would probably leave the cinnamon out too. If I want something special in my chocolate chip cookies, I add orange zest! 😋

    No bake cheesecakes, or as my mom calls it, icebox cheesecake, is our go to for all sort of functions. Our recipe is a bit different though. We dont fold in the whipped cream, we sub for a can of sweetened condensed milk.
    Our recipe ends up being
    •1 1/2 blocks of softened cream cheese (2 if your making a larger batch)
    •1 can of sweetened condensed milk
    •vanilla and lemon juice to taste.
    We end up using about a 1/ 4 of a cup of lemon juice because we like it a bit more tart, but it's up to you. Blend on high in blender until smooth and then pour into crust of choice (we use premade graham for ease of use) and chill for at least three hours or overnight for best results. Top with whatever you like and serve. Works like a dream and goes well with a lot of other flavors, like citrus or chocolate.

    Wow you actually made no bake cheesecake! The version I saw used premade Philadelphia cheesecake and cool whip! I bet yours was better! Oh but it also had strawberry pie filling and they colored the cheesecake green so it was festive 😊

    I just saw a video called maple butter/ spread
    I can't find the video since I don't have tiktok but I know the recipe so if you want to please test it
    In the original video the person boiled maple syrup ( think they used a medium or small sized full bottle ) to 232 Fahrenheit or 111 celcius ( please check the temperature conversion if you are gonna make it ) and let it cool and then folded it or mixed with a wooden spoon or spatula for full fifteen minutes ( the fifteen minute mark is where it's a spread ) they said to stop at the 15 minute mark if you wanted a spread. If you want it like a thick spread like a hummus ( sorry that's the only thing that's similar to the texture popped in my mind) mix for two or three more minutes.
    Now, the person who tried it boiled it for about 107 or 108 Celsius and cooled it and used a hand mixer to whip it. It became a liquid spread.
    I hope you guys try this and let us know.

    Confectioners sugar (u.s.) = icing sugar (uk). All purpose flour (u.s.) = plain flour (uk). Pastry flour = ????? Much googling later = confused of Portsmouth, England

      In Germany it seems to be 405 Flour, so finely milled one as apposed to 550 all-purpose Flour. Don't know If you have the Numbers on your packages though.

      I kind of agree. Peanut butter and salt a big yes- not for Rachel or Rach-adjacent people, but cinnamon raisin should stay in its lane. However there is this vegan cookie that is out in Australia in one of our supermarkets that's like a granola cookie with golden flame raisins, dark chocolate chips, cinnamon, pumpkin seeds and coconut chunks and my mum really loves them. I (the audience of these cookies) find them too busy.

    For the cocktail, you freeze cranberries and the rosemary sprig! The cranberries weigh down the ice

    A suggestion for the snow globe drink, maybe freeze the tree upside down so when the ice rises in the glass the tree will be hanging from the floating ice. But I think freezing the tree in an individual ice cube would be easier, too. You could just drop them into the poured drink.

    Try adding instant coffee to the cookie dough. It sounds good to me. I even add instant coffee to my shortbread dough

    Even though you just said you were sure about cinnamon in a chocolate chip cookie I had to pass on my absolute favorite cookie recipe
    1 c butter, softened
    3/4 c brown sugar
    3/4 c white sugar
    2 eggs
    1 tsp vanilla
    1 1/2 c flour
    2 c oatmeal
    1 tsp salt
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp nutmeg
    1/2 tsp ginger
    1/4 tsp cloves
    Chocolate chips to taste
    Cream butter and sugars, add everytbjng else. Bake at 350° F for 12-15 minutes. Only just brown on the edges will give you deliciously chewy cookies.
    These are my go to, year round cookies, please rethink cinnamon as a seasonal flavor, lol

    How do you store your cookies after you bake? Mine start off nice and crispy on the edges soft in middle, then I put them in cookie jar or sealed container and then they turn all soft. What am I doing wrong.
