Looks like regular miso so technically aka miso but it's really yellow miso, although there's a relatively less common "true" aka miso which is really dark
Thank you for the comment! The miso paste I used in the video was awase (mixed) miso, which I believe is called yellow miso in English. The one I used specifically was a mixture of rice miso and soybean miso! But this recipe works well with any types and you can surely enjoy experimenting!
I'm curious why you don't put it on the sides. I understand you said you don't fry the sides.... Is it just a taste preference, or does Mirin have to be cooked..?
I wish to eat them and make them... but here in Switzerland I saw that the rice (in another recipe they speaks about koshihikari rice) and it's not so cheap here... 😢 the same for sesame oil that I love etc.. I would love to eat more rice, but I'm annoyed by "Risotto". I'd want more onigiri, dango and mochi in my life. 😂 Can I use any sushi rice? ありがとう ございます!

Mirin contains fair percentage of alcohol (around 15%), so in most cases, we want to cook it to get rid of the alcoholic flavor! Hope it helps! :)

Yes, I think short grain rice is called "sushi rice" in some countries, but vinegared sushi rice is a different thing.
