  • Authentic Cantonese/Chinese stir fry cooking. Tasty garlicky eggplant with ground pork in garlicky soy sauce. Easy to make, perfect serve with steamed white rice. Enjoy .

    5 oz. ground pork, coarsely ground
    16 oz. eggplant, use rolling cut technique
    1 Tbs. ginger, minced
    10 pcs. dried red chili pepper
    cooking oil, as needed
    1 Tbs. green onion, chopped, for garnishing
    ** pre mix garlic sauce **
    ½ cup rice wine
    1 Tbs. light soy sauce
    1 Tbs. oyster sauce
    1 Tbs. sugar
    1 Tbs. Chinkiang vinegar
    1 Tbs. sesame oil
    ½ tsp. dark soy sauce
    ⅛ tsp. white pepper
    3 Tbs. garlic, minced
    1 tsp. corn starch

    Over 10 years showing my lazy American ass how to cook authentic Chinese food. Happy Wok is unstoppable. The gen tso chicken is always popular at my house, but I think it's time to study the eggplant dishes! 👏👏🇨🇳🇺🇸

    I make this a couple times a month especially in summer when I'm growing eggplant. Its one of our favorites. Sometimes I make it spicy too.

    Hello. Very nice dish. Won't be cooking eggplants anytime soon cuz my girlfriend's sister doesn't like it. Sometimes I like to do a lunch meal with my sweetie so we could eat eggplants then. I've been noticing a lot of ground pork / chicken / beef recipes as of late cooking online. I've never seen ground various meats during my Chinese restaurant days but maybe I should give it a try. Tomorrow I plan to make for the first time, a cornstarch coated chicken with red peppers. Gonna be good. Until next time Chef.

    I am assuming that you put the ginger in the garlic sauce!

      It appears to be added to the pork after it's added to the wok.
