Yay runnyrunny, I want to make this so easy. I have mirin, no saki, and no udon, but every other noodle. I think thick spaghetti might work. Thank u for giving such awesome recipes all the time. Please stay safe everyone :)) Peace always maria oox
Instead of sake, try using some rice vinegar and cut down a little bit on the soy sauce. It'll have much of the same flavor; mirin is also made from sake (just sweeter), so you can cut the sugar down a tad as well.

1 c. (200ml) water
1 tbsp. Soy sauce
1 tbsp. sake (optional, or you can use mirin)
5g dashi powder or granules (1 tsp)
Pinch of sugar
Prep udon, add toppings, enjoy! いただきます!

I think that's "white bait", which are tiny dried fish. I've seen them in Asian markets. Each of those little white threads is a whole fish!
