Scaccia - Street Food in Sicily

A visit to Trattoria I Banchi in Ragusa to see how Scaccia Ragusana is made -
Fillings:
1:27 potato and artichokes
4:14 broccoli and chopped dried tomato
8:07 ricotta cheese and sausage
9:14 ricotta cheese and broad beans
14:11 cherry tomato and ragusano caciocavallo cheese, basil and extra virgin olive oil

That is a beautiful city, in a beautiful area of Sicily. We were fortunate to have been able to enjoy a meal at Duomo Ristorante there a couple of years ago.

I don't think that the two younger guys are accustomed to having the boss working with them. His main restaurant, Duomo Ristorante, is nearby, and he probably spends most of his time there.

They are feeling the pressure of being recorded, based on what they're saying, but the product is authentic. At 19:13 the owner tells the guy to don't be too excited/confused.
