Today I made a beautiful rainbow jelly cake.
I remember seeing a rainbow in the sky after it rained when I a kid.
How fantastic...
The rainbow we saw together while holding her mother's hand...
Perhaps because of those happy memories, rainbow colors always bring excitement.
I'm going to make a beautiful rainbow jelly cake with full of that fluttering heart.
This time, the cheesecake must be squeezed by putting it in the nozzle, so be careful when mixing the whipped cream.
Otherwise, the cream may become thick or crumbly.
So, even when mixing gelatin, I went back to the beginning and mixed it with the standard after a long time.

Also, you need to mix the whipped cream with slightly different volumes to create a firm yet smooth cream.
And what about konjac jelly, which boasts elasticity...

237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)
● Cake finished size ( 22cm * 22cm * 7cm )
● Pastel Rainbow Jelly Cheesecake
(Mold size: 24.5cm*13cm)
100g Grahams Cookies (Small Pieces - 27)
13g sugar ( 1Tbsp )
55g unsalted butter ( 1/4 cup )
500g cream cheese ( 2 cups + 1/4 cup )
135g sugar ( 1/2 cup +3Tbsp )
100g sour cream (1/2 cup)
(or 100g unsweetened yogurt without water)
15g lemon juice ( 1Tbsp )
5ml Vanilla extract (1tsp)
13 g powdered gelatin ( 1 Tbsp + 1 tsp )
65g water ( 1/3 cup +1tsp )
400g heavy cream (70%~80% whipped) ( 1 cup + 3/4 cup - before whipping)
● Rainbow Konjac Jelly
(Mold size: 26cm*18cm)
(** The recipe below is required for each color.)
Sugar 15g (1Tbsp) *6
Konjac powder 2.5g ( 1/2tsp ) *6
100g water (1/3 cup+1Tbsp+1tsp) *6
2.5ml lemon juice ( 1/2tsp ) *6
●What about konjac?
Konjac is a food ingredient made by processing the kohlrabi of Old Testament herbs and belongs to the potato and starch category.
It has the characteristic of expanding its volume when water is absorbed, so it is easy to feel full even with a small amount, so it is often used as a diet food.
◇Konjac does not contain special nutrients such as protein, fat, or vitamins, but it is rich in dietary fiber called ‘glucomannan’.
It is also rich in minerals such as calcium, sodium, potassium and phosphorus.
It is effective for obesity, constipation, and bowel movements. In China, it has been used as an anti-obesity remedy for emperors since ancient times.
And in Okinawa, Japan's representative village of longevity, it is said that konjac is eaten with every meal.
The reason konjac is gaining popularity these days is because it can give you a feeling of fullness even with a small amount and because it contains fewer calories, it is perfect for dieting.
However, since konjac lacks essential nutrients such as carbohydrates, fats, and proteins, and micronutrients such as vitamins and minerals, it is important to note that nutritional imbalance may occur if konjac is used for every meal.
In addition, it is important to drink enough water when consuming konjac because konjac can cause constipation if there is not enough water.

Dear Boone Baker, I love your videos! I was watching Caro Trippar videos and ended up watching yours, they're amazing. I also noticed the misunderstanding with her. Language barier for sure. You see her videos say "desmintiendo" which would translate horribly for sure, but she means "trying out" the recipes. So she loves you, she always says how amazing you are and your recipes and Just wanted to come and give you some love on her behalf. Keep being great

This just brought back so many memories😇. When I was little my dad bought me a cooking set🍽 so me and mom would always make little rainbow treats🌈 everytime it rained. A few years go by, my mom was coming home from work and she sent me a picture🖼 of a rainbow that was in the sky. Ever since then, I always make rainbow treats🌈 on her special days, like birthdays, anniversaries, and holidays. This would make her so happy for this up coming Mother's day👪.

I absolutely love that you explained the important information about konjac and then as you folded,you tempered the liquids into the cheese and cream. So important to fold and not mix too hard. I did the same thing! It looks like art. Almost, but not quite, too pretty to eat. That masterpiece’s main ingredients were her attention to detail, creativity and love of her craft. Her use of fresh, delicious ingredients was, of course, a great thing to see.
If I tried to make it with my daughters we might mitigate the huge mess. Then again? Probably not. I’m pretty sure nearly every vessel, dish, bowl, pan, pot, baking tray/sheets as well as all of the actual measuring vessels, and most of the utensils I own would be in dire need of a good wash! But if I walked out of the disaster area of my kitchen with this delicious, impressive gem…well, I’m fairly certain that it would’ve all been worth it. I love the creations you share with all of us and I’m more than a little envious of your calm demeanor! Not jealous but I admire you so much and yes, a bit envious because you make it look as if it might be possible for me to make a lovely cake like that! That’s a whole other level of inspiration.
