Me I think in the heating furnace we use oxygen further than carbon dioxide ;
The role of copper is to reduce the gases ( nitrogen oxides) to free nitrogen but not to reduce the food sample ; the food matrix has to be heated in an oxygen atmosphere to oxidize the food sample
