This a must have recipe!! The only change I would make is omitting the asparagus and adding water chestnuts.
Oh my goodness and some of that baby corn yummy
At my house we would omit the asparagus, swap the cashews for almond slivers, and add fresh mushrooms. Yum, don't get no better than that!
This looks delicious. I might have liked to thicken that sauce a bit with some cornstarch, but it looks so delicious! I feel like I can almost smell it! God bless!

Gotta have snap peas in Chinese dishes! Those tiny corn on the cobs are yummy too! BTW, have you tried adding cornstarch to your flour mixture? It will really crisp up your chicken pieces. Sure looks good, Catherine. Folks in your house sure eat good!
I always get a thumbs up from my family when I make your recipes. I know this one will get one. I love all the veggies you are putting in it. I will do the same. I dont know about you but I prefer home cooked meals rather than eating out. To me its so much better!!! Thank you for all you do❤❤👍

Me, too, and I'd have cooked the onions with the chicken, from the get-go. I have done my own stir-fry for many many many years...my woks are so well-seasoned, they are just beautiful. However, I have never tried it in a crockpot...it's a very interesting concept and think I'll definitely try it...wonder if the veggies are still crunchy to the bite...the more veggies, the better!
Yes, if you add the veggies towards the end, they will keep their texture.

Did it again and accidentally hit the send button before I finished! All the recipes I grew up on...we could be sisters, I have red hair, too, but in my older years, I am turning blond but my ponytail is still red! If I remember correctly, your son, Joseph, is a redhead, my youngest son is too, but always claimed he had brown hair because he has brown eyes, which is unusual for a redhead, according to his pediatrician. My older son has brown hair, like his dad. I'm the only redhead out of five kids although my dad told me he had red hair, what little he had of it when born, for a few months. My dad was half Swedish & Norwegian and pretty darn sure that's where it comes from since my mom was French/Native American. I have two siblings with brown hair (one light and one dark) and two that are tow-heads! When I was in first grade, I remember one of my classmates used to call me "spotted dynamite" due to my freckles (and temper), which have all but faded (on my face, anyway). I had not yet learned that redheads "are special" according to all the "old ladies" in church when I was growing up and I clearly remember like it was yesterday that one of them told me, "freckles are kisses from Heaven!"

Another yummy dish and a bonus it’s in the crockpot. Definitely going to add snow peas and water chestnuts along with those other yummy vegetables that you put in. Thank you Catherine for another flavorful delicious quick and easy meal. ❤️😋
You will get a much more delicious and complex flavor if you use fresh or frozen ginger. You can peel and grate a ginger root, then separate it into teaspoon or two teaspoon servings and freeze them in an ice cube tray, then pop them out and place in a freezer bag, and just grab a cube whenever you’re making an Asian dish that calls for ginger. If you’re really wanting an authentic flavor, I’d personally add a dash of five spice and perhaps at the end of cooking, a can of water chestnuts and bamboo shoots. The chestnuts will add a delicious crunch, complimenting the cashews. If you can find lotus root it’s an incredible add to Asian dishes like this also.

My Chinese restaurant always adds celery to theirs but my favorite thing to add is water chestnuts. I love that crunch!

Hi Catherine! I have a recipe I’d like you to try!
It’s called Norita’s meat loaf!! It is the best meat loaf I have ever had!! I think you would really like it!!
1/2 cup of ketchup
2lbs of hamburger
2 beaten eggs
1 large onion (chopped)
1 tube of saltine crackers (crushed)
1tsp of salt
1 tsp of pepper.
(SAUCE)
1/2 cup of ketchup
2tsp of vinegar
3 tbs of brown sugar
1 tbs of mustard
3tbs of water.
Combine the meat ingredients and put into a baking pan, poor on the sauce and bake at 350 degrees.
For 45-60 minutes.
If you try this it’s my grandma’s recipe. Hope you enjoy!!

If you hadn't put broccoli in the crockpot, if you put the broccoli in a bowl with two tablespoons water cover with plastic wrap put in micro for 2mins.leave in the microwave until your food is done then put drained broccoli then add to you food,your broccoli will be a brite visit green and perfect, I learn from a Chinese Chef, I just thought I would help with this idea

Broccoli, half cup frozen peas, carrot, onion, fried egg
This was a huge hit at our dinner table. I steamed some snow peas to mix in at the end and added a can of rinsed baby corn. Also, I used coconut aminos in place of soy sauce. It was delicious! Thanks!

Mmm!!! I make something similar to this using Knots Rice sides teriyaki. Cooking the cut up chicken breasts first, then adding two of the rice packets, water and teriyaki sauce. I use about 1/2 less of the water called for on the package. Let it simmer for about 15 min. Then add a frozen package of mixed veggies, any kind I have on hand. My favourite is broccoli, cauliflower, and carrots. Simmer covered until veggies are softened. I usually add a little bit more teriyaki sauce as I'm cooking it and at the end for more flavor. It makes a yummy one skillet meal! 😋 I definitely like the crockpot idea! Gonna' try it sometime!👍

Wow that is beautiful dish.. I finally tried out the Basmati rice what a big difference. Being Filipino were used to regular white rice. Basmati rice is good for people that have diabetes its got a lot of good health benefits. Thank you again Catherine 💓

Looks yummy. Cashew chicken is my favorite. I've tried a couple other recipes and they weren't to our liking. I'll use all the veggies you did but the asparagus. I can't wait to try this one and it's done in the crockpot .
