There are parts of both that have literally jaw dropping scenery that's going to make you feel like you're going to crash your car.
And yes if you really want to have the best experience in that part of the UK I give the same advice that I give if they come here to Texas:
You have to rent a car so you can explore what you want to, find hidden gems, meet more locals, and most importantly you make your schedule so you'll never feel pressured to leave a place you really want to explore.
Yes you have traffic circles, the steering wheel is on the wrong side of the car and you have to drive on the wrong side of the road, and in rural areas it's a challenge because of farm equipment, and sheep and cattle crossing the road.
So you get out of the car and go talk to the farmer.

As a native born Texan I always love seeing the Alamo. But the iconic building in your vid is only a small portion of the original mission. The building behind you was the chapel. It was intended to build it three stories tall with bell towers but they only got two stories built. It and a convent stands in what was the south end of the inner courtyard, but was only a small part of the total mission enclosure. There were over thirty adobe buildings within the complex in addition to the chapel. Most of it was inclosed in a two foot thick wall about two and a half meters high. The north-south walls were 150 meters long and the east-west walls that completed the inner court were 49 meters long. In total, the rectangular mission covered over three acres with the building which still stands located in the southeast corner. Most of the mission no longer remains, obviously. But that 13 day long battle didn't take place in that one small building.

Tamales are just meat or something else in cornmeal steamed in corn husks. It’s very labor intensive to do and really is only busted out during major holidays like thanksgiving or Christmas. You literally have to get the cornmeal ready by making a dough which needs to sit overnight, corn husks that soak in water for three days with a certain chemical to make them soft enough to use, then meat or whatever filling it is. You need to have a lot of people to make these assembly line style with one person doing one job like spreading cornmeal or wrapping it together. It’s a long process to do but cooking isn’t that simple either as you have to constantly watch the steam as too little it turns to dust while too much they turn to mush, people constantly adjust heat to get the best results. Takes several days to pull off.

That's a very bougie presentation of a tamale, but I'm sure it was tasty. As for me, whenever I try out a new Tex-Mex restaurant in my city, I always have to try their fajitas....usually beef or chicken or a mix of both. It's like the signature DIY Tex-Mex dish....they bring the sizzling meat and other fixings and warm tortillas and you assemble them to your fancy....and they're amazing. Wash it all down with a cold Negra Modelo or a cold bottle of Corona with a lime slice in it....heavenly.

it’s just a different type of meat to put in a taco. And is awesome when the fish is cooked correctlu or seasoned correctly. But yah a fish taco can go bad easily also. And also furthermore, fish tacos are just another type of cuisine originating in Mexico where all our other favorite Mex and TexMex cuisines came from. Mexicans that live along the Pacific coast or Gulf coast naturally put the fish meats that they had access to into their tortillas. So it’s easy to understand, why, how, when, et cetera, and it is totally ok if you never ever will like them because of your personal preferences. But CAN and SHOULD understand the concept of fish tacos while simultaneously preferring to not ever eat them according to your rightful personal preferences. Berryhill’s fish tacos in Houston! A local favorite!

Fyi, rural Americans tend to exaggerate the dangers of cities. There're a lot of urban myths about the dangers and violence in cities. Currently there is a lot of road rage, political violence, and lots of property crime, but actually rural areas tend to be worse now than all but the most densely crowded, poverty stricken areas. Cities actually tend to have better policing and faster response times than the countryside, and there's far less drug crime in cities now rather than in the country, where most illegal grows and labs happen. As bad as the homeless population and concurrent drug problems seem in our cities, the opiate epidemic, fentanyl trafficking, and the meth crisis are far harder on country folk than in the cities. The Mexican Cartels routinely get profiled and rounded up in the cities. Their big markets, the places that they mostly operate, and the gangs they work with are in rural areas where it's easier to hide. Only their transportation systems route through cities, though of course there is some distribution everywhere.
Mostly you're fine to walk at night virtually anywhere in the States. The homeless are mostly people who have been bankrupted one way or another and are only trying to pull themselves through. But the psychotic meth-heads and street criminals give all the homeless a bad name. There are areas to avoid, but property crime is still far more common in those areas, rather than violence.
