    I made this but also added
    1/4 cup of light soy sauce
    1tbs of garlic powder
    1tbs of onion powder
    1tbs salt (cheese is salty, so I had to add this)
    1/4 cup nutritional yeast
    Pretty damn close to a nacho cheese! Enjoyed it

      Banana Wisdom I'm also sure that it is one of the first (if not THE first) vegan cheese without nutritional yeast. You see, I don't think that nutritional yeast tastes like cheese at all; It does add some savoriness to dishes of all kinds, but it also tends to completely mask the delicate flavour of any other ingredient.     whoa, vegan cheese that is carrot and veggie based! This looks amazing! We tried a vegan nacho cheese sauce on Nachos and they were eggplant/almond milk based, but this looks like it would have a better flavor

    I made this recipe yesterday and had it with some macaroni pasta because I was craving macaroni and "cheese". I had to leave out the miso because I didn't have any, and I substituted the roasted red pepper for sun-dried tomato because I didn't have that either, and it was delicious! I will try it again when I have the full ingredient list and I'm sure it will only be better that way!

    Made it a few days ago for my birthday, everybody was so impressed how good it tasted! (I didn't have roasted almonds or tofu, so I used some cashews and walnuts instead) I also used it a few days as a spread on bread which works out perfectly as well. Thanks for this amazing recipe!

      Racey Baby Well, the basic ingredients to add savoriness to vegan dishes are always the same, and they can be found in the majority of vegan cheese products. However, we also removed as much starch as possible, as it has a poor flavour release and tends to mask the aroma of the other ingredients. We also didn't use nutritional yeast, which is basically unprecedented. I hope you enjoyed the video and thanks for watching :)

    Hey there ! This is one of the first ever video I saw when I went vegan 3 years ago. I had no clue what was possible to do and your channel opened my eyes to all the delicious possibilities.     Next can you make a cheese sauce that's as bland as the boxed mac & cheeses so that my kids might actually eat it? This looks like it has too much flavor for them. Can't wait for myself to try it though. :)

      Jason Baker Glad you enjoyed it. Why not making it yourself for your children by simply removing a few ingredients? If you remove the Jalapeño, the miso, the cumin, half of the paprika, the garlic and the vinegar it should become much more bland. I suggest you to try the original for yourself and decide what flavors you think should be removed in order to make it better for your children. I hope this helps :) Thanks for watching

    Living in Japan, I realized that many fermented plant foods (such as miso) have a cheesy flavor to them if combined properly.

    this is so great! Seriously, I was doubtful at first because there are so many vegan cheese sauce videos but this really works! Esp in a pasta too! I didn't have some of the things like miso/red chillies and just didn't put those in, and used some other spices, like coriander powder too. I also put some cashews instead of almonds. If you're contemplating a healthy cheezy dish, you have to give this a fair chance!!

      Movation Thanks :) I'm glad you like our work! I use many different software actually; premiere, after effects, final cut pro x, Speedgrade and Davinci resolve. It really depends from the kind of video I'm making.

    I love cheese, but I truly hate all the fat that comes along with it. I was a vegetarian for 8 years, so veggies are a staple in my life, but right now I'm not even close to being Vegan.     That's good info. I haven't tried the recipe; I'm way to impatient to do all that ;) I'd just assume dip my chips in fresh cut salsa and/hummus and be done with it. I think trying to replicate the experience of cheese/meat is more effort than it's worth. To each his own, of course...

    Hey. I'm definitely going to try out this recipe. It's so simple and easy.
    The only thing I don't have is the black miso paste and I don't know where to find it. If I'm not going to use it, it will make any difference, or should I put something else?

    I don't like the vegetal flavor of carrots which is still there so I use either Frozen pureed butternut squash or frozen chunks of butternut squash. I think it's also nicer than carrots.

    just made it and it is good although it doesn't taste like cheese at all.. I even added some nutritional yeast but it didn't help and I don't think I did something wrong..

      You know, there is so much flavor packed into this recipe, I have no doubt it's a winner even without fat. Let's face it, nacho cheese sauce, even the vegan kind, can be cloyingly greasy. Am really looking forward to trying this one!

    great channel but I was wondering have you ever made a truly extra firm vegan cheese? I've tried other recipes that use agar powder but they all came out about as firm as silken tofu or jelly. Yeah, they were sliceable but they just didn't have the texture I am looking for.
