    The best ever triple lemon macarons recipe! These lemon cookies are simply amazing!! They're made with a lemon-flavored macaron shell and filled with my 'Lemon Buttercream' and my homemade 'Easy Lemon Curd'. So much incredible lemon flavor combined into one cookie!       These will stand for weeks in the refrigerator and 6 months in the freezer. Just make sure to store them in an airtight container :)

    The macarons were good. Liked the buttercream, the lemon curd was not my thing. They were also a tad bit too sweet for me :) Thanks for the recipe Tanya❤

      I'm glad you enjoyed the macarons! Did you use the citric acid in the buttercream? It makes it extra sour, which really helps balance out the sweetness. I don't like my macarons too sweet either! :)

      I've wondered that, too and I've tried it. I've had no luck without a rest period. Allowing them to rest creates a thin film on the outside, which give it that signature smooth shell.

      I use a gas stove! :) I really had to play around with the temperature and baking time at first but once you get it down, just use the same temp and time for all macaron recipes.

    Can I make shells one day, and then fill them the next day? If so, how do I store macaron shells? I plan to make these macarons and put them on top of your lemon raspberry cake. Thanks for the great recipes!

      Hi! Yes, you can absolutely do that! Just let the shells cool completely on a wire rack, then place them into an airtight container. They can stand for days at room temperature. Hope you enjoy the cake!! :)

    I wonder why mine turn out hard as rocks, I have an old oven that was put in my house in 1960. Do you think it would help if I got a small countertop convection oven to bake them in?

      Hi Debra! I recommend placing the filled cookies into the fridge for a few days. It will make the biggest difference! Once they sit, they will absorb moisture from the frosting, making the cookies the perfect texture :)

      @@TatyanasEverydayFood I got a scale to use and boy did it make a difference. While most videos tell to use two egg whites, well where I live the large eggs are not really large and it took almost 5 eggs to get 100 grams of egg whites!

      You can also use a ziplock bag, just cut off a small piece off the edge of the bag and use it as a piping bag :)

    I can't get my eggs to whip. Should the sugar be added immediately or should the eggs be mixed first? Do I need an expensive mixer to make it work? I'm using a Hamilton Beach mixer.

      Are you washing your mixing bowl thoroughly? The biggest thing that will keep egg whites flat is oil or grease. Any little amount will ruin the egg whites. I recommend washing the mixing bowl with vinegar and the rinse with water. The sugar can be added immediately and you don't need an expensive mixer; a regular mixer will just take a few minutes longer.

      @@TatyanasEverydayFood thank you for responding! I had washed the bowl and wiped it with white vinegar. The eggs eventually whipped (after almost an hour) and I got the macarons to work! I'm aging three more egg whites to try again tonight and I wiped all bowls with lemon juice before I started. Hopefully it'll be easier this time!

      @@TatyanasEverydayFood I may have figured it out: I have a Hamilton Beach stand mixer with a whisk attachment. I discovered that the whisk attachment does not reach the bottom of the glass bowl and doesn't actually touch the eggs. The glass bowl is too wide. I fixed this by holding the bowl at an angle to allow the whisk to touch the eggs.
      Hopefully this helps someone else!

    How much is 200 grams in cups? Also the powered sugar and almond flour.

      Hi! Since grams and cups do not convert directly, you'll need to convert each ingredient.
      50g of granulate sugar is 1/4 cup
      100g of almond flour is 1 cup
      125g powdered sugar for 1 cup.
      However, macarons are the one cookie for which I recommend using a kitchen scale. The amounts need to be very precise.

    My macarons NEVER form a shell, I waited 3 hours once and they never formed the shell. I've tried everything. 😕 Any idea why they won't form a shell?

      So sorry to hear that! Do you live a high humidity area? These cookies are extremely sensitive to moisture. Try placing the trays next to a fan set on the lowest setting and see if that helps! :)

    These look good, but I think using lemon flavouring would ruin them. Lemon flavouring often tastes very fake and often doesn't taste like lemon at all. Would there be a way to flavour them like lemon without using lemon flavouring? Most lemon flavourings have a chemical taste...

      You can add lemon zest instead of using lemon flavor. I recommend using a high quality lemon extract. I get mine from the brand Lorann Oils on Amazon. The best tasting extracts.
