the cut test with "Serenity" 11" chef's knife

Testing out this big knife and seeing how it does with some onions and potatoes.
First impressions are pretty nice, I know I made it but makers will always test their knives to make sure it does what it's designed to do. these are simple foods that gets used in most meals and it's important to get those right.
There is a couple of minor things that I may change, when I do a batch run of these but they are quite minor,
