Growing up in the 60s and 70s, East coast, USA, lamb kidneys were always available in our local supermarket. My father, an Irish immigrant, was fond of strong meats for breakfast-pork chops, liver, cheap cuts of steak, smelts and lamb kidneys. Once or twice a month we'd have bacon, eggs, black pudding, sausage and lamb kidneys, all fried up on a weekend morning. Delicious, I miss those kind of breakfasts!

I love offal, lamb kidneys are a real treat. I don't know if its a cultural thing between South Africa & the UK? But I'd always take a few minutes extra while they're raw to de-core those kidneys. The white core to a kidney is pretty hard & gristle like, it could be one of the reasons many don't like eating them. Once cored they are butter soft & delicious. Very nutritious, healthy & cheap meat to eat.
I tried, but throw the kidneys in the trash-can! Could not get rid of the foul smell even after soaking them in vinegar!! I stick to the liver and hearts!!

@@harryviking6347 sidenote: you know whats an awesome spice is Chipotle powder, its not even hot really.. its just tasty, im thinkin thats what might tame this bizarre food. And Im only experimenting with these "offals" because their suppose to have a completely different nutrient profile than the conventional muscle meat... we'll see what happens.. I dig 'cumin' too, I know theres a trick to it lol

A lot but with herbs and spices, the smell goes away!!!
