You can use any meat stock for more flavor, that way you boil your tomatoes for a bit longer so it becomes thicker and it's taste so much better when your stew cooks so well but you did an amazing job 🥰

U did well with the jollof nut next time reduce the water u put in the blinder when blinding the tomatoes and onions. Doing that will reduce the time of cooking and let the stew cook more . U should also put the rice in the stew not vice versa

Also, the way you have normalised cooking in bulk and freezing the food , you know how people say ohh...that's not right, ooh..food ain't fresh... I just don't get it. .. and when I cook, I freeze alot, off course later I will have to say sooo many prayers, because KPLC can give you a heart attack. Now I just need a large family to cook for 😉 ,coz this cooking for one person ..and not having to see delighted faces aawing at my cooking and enjoying it, is getting a little bit boring. Suzy, jollof must burn. It gets a different taste when it burns,it does not taste burnt just gets a different flavor. Also, try roasting your tomatoes and peppers in the oven for about 30 mins in a 240°c oven then blend and fry.

We don't put palm oil in jollof in Ghana. What you should do is use some tasty homemade beef stock and season the sauce b4 adding rice.
