You will need a good, high-gluten flour in order to make this type of bread. Type 00 will most likely do, all purpose - not so much. I tried a lot with different kinds of all-purpose flour and always ended up with disgusting slimy substance in the proofing pan instead of beautiful doughballs shown in this video.
Yes, high-gluten flour definitely has it's benefits! However, in this video I used King Arthur all-purpose flour which does have a higher gluten content than typical all-purpose. It's good quality at a great price from my local Costco. I've also used Gold Medal unbleached all-purpose flour. I also like to grind my own wheat and use that for 1/3 of the flour called for. Yummy!
