This type of cooking is easy to botch so I hope the chef didn't feel too bad. I've experienced underground cooking 3 times in my life so far and the best one by far was a lamb in Iceland. The other 2 times were in China and the host rushed it way too fast. One of those times the chef looked like he was going to have an anxiety attack so I basically fed him baijiu until he was drunk enough to accept it wasn't a big deal and we could still have fun.

As someone who comes from a BBQ state 3 hrs for a whole goat is way too little. I'd say 6 hrs minimum but aye undercooked isn't always bad as long as it's clean meat.
I have been in this situation before. If you're in a region where they don't get many foreigners the host can feel a lot of pressure. I suspect the chef probably worried that his guest would wonder why it was taking so long and opted to rush it with the good intentions of not keeping his guest waiting.
Man, I'm glad that you got Ali to do some stuff too; I hold by my statement from the Lahore video that all the Pakistani people that you have had cohost with you are awesome and riff great with you!
I love watching Sonny. He has a real way of connecting us to.different cultures through their food. I just enjoy seeing that even though some of these countries have a real negative image on the news, the actual people really aren't all that different from anybody else. The world needs to see more of this side of things.
If u want to eat the best underground cooked goat or lamb, then u have to go to the city of QUETTA in the province of Balochistan, Pakistan.... There is a speciality, a dish called "Khaddi kabab", cooked underground....so yummy 😋
Hope the chef didn't catch too much grief over the uncooked lamb. He did such an amazing job on everything else. I can't imagine filming constraints didn't play a role in rushing things along either. I'm sure the shame can be shared.
You clearly aren't English then or your sense of humour would hope for the opposite. Infact if that happened in this country, we'd let out a collective pisstake cheer at it being raw, same as when someone drops a tray of drinks.

I don't believe Pakistanis in real life would have wasted a whole lamb because the cooking "vault" was opened. I'm sure the coals could have been re-fortified and the lamb put back on the heat for another couple hours. He was rushed, out of his normal routine, and this channel crapped on him. This episode put a bad taste in my mouth for this channel.
This episode was one of my favorite. Really made me want to visit Pakistan. The people seemed so welcoming. The food looked really good. Your local guide seemed like a good sport. Goat needed a couple more hours and ALOT more coals

7:43 jaggery or gur is the natural sugar originated in Bengal province of India. Bengal has 15000 years of history prepairing and consuming gur. in winter season Bengal produces date Palm jaggery, most delicious gur on earth.
Mhm, and the Muslim Indians of Pakistan in large part came from the Bengali area, as well. It's only been about the lifespan of a single generation since the formation of Pakistan, after all.
to taste the underground cooked goat you should visit southern part of pakistan a city named quetta, there you will find one of the best cooked underground goat in the whole pakistan and many more meat related foods...
These underground cooking of goats also known as Mandi are more common in Balochistan region of Pakistan rather then Punjab, so if you want to experience authentic one's Quetta is your place

I get those pickled/salted mangos (Uppu Manga) every time I go to my favorite Indian restaurant. SUPER salty - it's like Indian/Pakistani soy sauce. I usually chop it up and throw it into the rice or whatever dish I'm eating. Really stoked you went to Pakistan. An amazing culture we hear very little about in the states. People look happy, kind, friendly and warm and the food -outside of the half-cooked goar - looks amazing. Actually, the goat still looks good and I woul absolutely have eaten the top layer. Well, except that I'm a vegetarian, but if I wasn't, I would! lol Hopefuly there's more of Pakistan in the next day or two!
Those pickled mangoes are called "Arooga" in Tamil. They're very popular in South Indian vegetarian food. I found it very bizarre that they were eating them straight up... we mix them with yogurt and rice usually to add a flavor profile.
almost every culture has the underground cooking method, and it's never easy to master it, a lot of people tried in my presence and botched it completely, and I actually tried it only twice in life and I'm 36 years old.
Another great video. Shame the food didn't cook properly or it would look amazing. This is Baloch style and really delicious, it's hard to get it right if you're not used to it but it's easy for them in Balochistan as they have it often

@@ahraranwar3227 I know this as I have travelled extensively and worked in other countries. I have friends ranging from Americans to Bangladeshi, Norwegian to African. Travelling is simple, eat what locals eat and do what locals do. Doesn't hurt to learn a word or two either.

Spot on Sonny, my thoughts exactly as I saw the ambers. I also think the metal top might not have been the best choice, it is a good heat conductor. If they topped it in some sort of thick patch of leaves, it could have been a bit better. Or if there were some ambers on the metal top, that could work as well.
Yeah my thoughts too. There were some ambers at the top of the table but all in all it was definitely very short of ambers. With that amount of meat it definitely needed a bigger fire, it barely even cooked the outer layer.

In Fiji, we call it Lovo. We marinate whatever meat we want, wrap them in foil and cook them underground for 2 hours or more. It's very succulent and flavorful. We also make a dish called palusami, which is tinned mutton wrapped in dalo leaves and coconut milk and we cook cassava and taro underground as well. 😋😋

Don't miss Peshawar city (Silk route with northern Pakistan) it will give you altogether a different rich cultural experience. More you go towards central Asia meat size increases and spices decreases, nuts added. Northern Pakistan os altogether different plum is kung there. All the best 👍
That’s Punjab it is similar across the border. Indians drink Lassi but I bet only Punjabis know how to do it right it’s the same in Pakistan you want Lassi go to Punjab. Pakistani Punjab is a cultural hodgepodge it’s like if Afghanistan and India had a kid.
I really like that you have shared this failed experience, this dish belongs to Balochistan much more then the Punjab. So technically you were at wrong place withe wrong chef but anyways full marks to his try. If somehow Ali make it possible for your visit Balochistan, you will fell in Love with this Saji/Khaddi Kebab. Anyways I'm loving this series as I waited for this for two three years.

These underground cooking of goats also known as Mandi are more common in Balochistan region of Pakistan rather then Punjab, so if you want to experience authentic one's Quetta is your place

I get those pickled/salted mangos (Uppu Manga) every time I go to my favorite Indian restaurant. SUPER salty - it's like Indian/Pakistani soy sauce. I usually chop it up and throw it into the rice or whatever dish I'm eating.
Really stoked you went to Pakistan. An amazing culture we hear very little about in the states. People look happy, kind, friendly and warm and the food -outside of the half-cooked goar - looks amazing. Actually, the goat still looks good and I woul absolutely have eaten the top layer. Well, except that I'm a vegetarian, but if I wasn't, I would! lol Hopefuly there's more of Pakistan in the next day or two!

There are many vegetarian dishes here but they aren't as popular as the meat dishes.
Those pickled mangoes are called "Arooga" in Tamil. They're very popular in South Indian vegetarian food. I found it very bizarre that they were eating them straight up... we mix them with yogurt and rice usually to add a flavor profile.

almost every culture has the underground cooking method, and it's never easy to master it, a lot of people tried in my presence and botched it completely, and I actually tried it only twice in life and I'm 36 years old.

Travelling is simple, eat what locals eat and do what locals do. Doesn't hurt to learn a word or two either.

Thanks :) , One lesson i learnt in my years of travel is expect the unexpected in villages like this and expect the people doing the work to be well built not gym junkies cause they probably work harder than most.
Spot on Sonny, my thoughts exactly as I saw the ambers.
I also think the metal top might not have been the best choice, it is a good heat conductor.
If they topped it in some sort of thick patch of leaves, it could have been a bit better. Or if there were some ambers on the metal top, that could work as well.
Yeah my thoughts too. There were some ambers at the top of the table but all in all it was definitely very short of ambers. With that amount of meat it definitely needed a bigger fire, it barely even cooked the outer layer.

In Fiji, we call it Lovo. We marinate whatever meat we want, wrap them in foil and cook them underground for 2 hours or more. It's very succulent and flavorful. We also make a dish called palusami, which is tinned mutton wrapped in dalo leaves and coconut milk and we cook cassava and taro underground as well. 😋😋

That’s Punjab it is similar across the border. Indians drink Lassi but I bet only Punjabis know how to do it right it’s the same in Pakistan you want Lassi go to Punjab. Pakistani Punjab is a cultural hodgepodge it’s like if Afghanistan and India had a kid.
I really like that you have shared this failed experience, this dish belongs to Balochistan much more then the Punjab. So technically you were at wrong place withe wrong chef but anyways full marks to his try.
If somehow Ali make it possible for your visit Balochistan, you will fell in Love with this Saji/Khaddi Kebab. Anyways I'm loving this series as I waited for this for two three years.
