Singapore is a dream destination for noodles lover. Because of the strong Chinese, Malay and Indonesian/Peranakan influence, there is an impressive variety of noodle dishes, differing in shape, texture, serving method, variety of toppings. In this Singapore Food trip I could only scratch the surface, but I have some of the most amazing noodles of my life; fishball noodles, dry noodles with awesome Cantonese roast meat, Laksa noodles, and lot more.
Today I wanted to add to me repertoire of noodles dishes by visiting a couple of stalls in the famous Old Airport Road Food centre. This is an hawker centre away from the crowd, which is very appreciated by local people for authentic hawker food and Singaporean cuisine. Here first I tried the famous "Roast paradise" an hawker stall selling the most amazing Kuala Lumpur style char siu pork and pork belly. I'm not sure how when and where I'll be able to top the amazing taste and delicious flavour that this Cantonese Roast meat and its luscious glaze gave me.
The second dish I try is one that literally blew my mind for its concept: Pork Ribs Prawn Noodles .... 🤯 I never imagine you could have a prawn noodle soup with prok ribs inside. The flavours in that soup where incredible and this may be one of my favourite noodles dishes ever. I tried this at "Albert Street Prawn Noodles", one of the most well known prawn noodles hawker in Singapore.
Finally, I went for a plate of Hor Fun - Chinese-style flat and wide noodles topped with big slice of beef. A very beefy and thick sauce which became magical once I added green chilli vinegar. I tried this at "Hin Fried Hor Fun with Prawn · Beef · Sliced Fish" and I suggest you to not miss this amazing auntie-run hawker stall when you are at Old Airport Road Food Centre.

Another great episode. Glad to see you made some excellent choices and enjoyed yourself sampling some of Old Airport Road’s greatest hits - well done! The prawn and pork rib noodles broth has such depth of flavor and is mindblowingly rich. One of my favorites.

A little bit delirious. 😂 The char siew and roast pork combo is brilliant really. They just complement each other so well. First sweet, then more savory, then repeat. The fatty bits just melt and the acidity and spice from the chili just kicks it to the next level. 😮‍💨

That's not kicap manis which is Indonesian sweet soy sauce. It should be the sauce from their roasting of char siew - char siew sauce. Remember never put the cutleries directly on the food tray, not clean.
That is sliced chili with soy sauce. Not a "chili sauce". It is a very common condiment. We usually just pick the chili to eat instead of pouring the entire soy sauce into the soup as it may be too salty. Hor fun is a Cantonese dish. It is found in Singapore/Malaysia/Hong Kong/Guangdong. You can find the wet or dry stir fry kind.
