Your chintan looks pretty straightforward and I particularly like your overnight dashi. For how long do you think you could hold it in the jar? Just overnight or could it go say, 3 days? Artisanal ramen is finally starting to take off here in the US.
that first "broth" was to clean the chicken bones! bc even though you can clean the chicken with water from your kitchen sink, it won't kill al the bacteria it has
Japanese dried finely sliced fish. It is a cream (not quite white) colored feather textured "seasoning," used to make soup broth. Bonito: A type of fish (skipjack tuna) that is often dried and flaked to create "bonito flakes," a main ingredient in dashi. Dashi: A flavorful Japanese broth typically made with kombu (kelp) and bonito flakes, used as a base for many dishes.
SALT LIVES INSIDE = Soy sauce, miso seasoning, dried fish seasoning, dried seaweed paper, and tons of other seasonings or toppings! Salt is the last thing that is LACKING ! 😖
Its not that expensive if you skip the dashi. Tho the ingridients for dashi is not expensive if you go to a asian market, you will have ingridients over for another dashi or tare. :)
This is such a healing broth ❤️
Thank you!

But where's the salt?
Typically the broth isn’t seasoned in ramen. The seasoning comes from the component called “tare”, if I understand correctly

I’m going to stick with the packet I’m to broke for this
