Easy Spicy Szechuan Chicken that you can make at home!

- this Spicy Szechuan chicken stir fry is made with Szechuan (Sichuan) peppers for that tongue-tingling heat. Plus plenty of dried red chillies too!

Szechuan chicken, also known as Sichuan chicken, Mala Chicken or Laziji, is a beautifully spiced stir-fried chicken dish, usually served dry, rather than saucy, and characterised by the use of Szechuan peppercorns and lots of dried red chillies.

INGREDIENTS:
Chicken and marinade:
▢8 boneless chicken thighs - chopped into bitesize chunks
▢1 tbsp dark soy sauce
▢1 tbsp light soy sauce
▢1 tbsp Chinese rice wine
▢¼ tsp white pepper
▢2 tbsp cornflour - cornstarch
For Frying:
▢240 ml (1 cup) sunflower oil
▢1 tbsp sesame oil
▢1 onion - peeled and chopped into chunks
▢25 dried red chillies - - chop 5 of them into small pieces and leave the rest whole
▢1 ½ tsp Sichuan peppercorns - ground using a pestle and mortar (the 1 ½ tsp is measured BEFORE grinding)
▢3 cloves garlic - minced
▢2 tsp minced ginger
▢5 spring onions - scallions roughly chopped
▢2 tbsp light soy sauce
▢1 tbsp Chinese rice wine
▢1 tbsp chilli bean paste - *See Note
▢1 tbsp sugar
INSTRUCTIONS
Place the chicken pieces in a bowl with the rest of the marinade ingredients.
Stir together, cover and marinade for 30 minutes (or up to a couple of hours - place in the refrigerator if marinading for more than 30 minutes).
Heat the oil (reserving 1 tbsp for later) over a medium-high heat in a large frying pan.
Add the chicken, a piece at a time (you may need to work in 2 batches), and cook for 4-5 minutes, turning a couple of times, until golden.
Remove from the pan and place on a plate.
Heat the reserved 1 tbsp of sunflower oil along with 1 tbsp of sesame oil in a wok over a medium-high heat.
Add the onion and dried chillies and stir fry for 2-3 minutes, stirring often, until the onion starts to soften slightly.
Add in the ground Sichuan peppers and fry for a further minute.
Add in the garlic, ginger and spring onions and stir fry for a further 30 seconds.
Add in the soy sauce, rice wine, chilli bean paste and sugar. Stir together and fry for another minute.
Add in the cooked chicken and toss everything together, heating for a further minute or two until the chicken is hot.
Serve with boiled rice.
✎ NOTES
Chilli Bean Paste - known as toban djan or doubanjiang - if you can’t find this, you can replace with Gochujang (a Korean Chilli paste that’s little sweeter, but still good), or at a push, hoisin sauce mixed with a good pinch of chilli flakes.

Dear Nicki the Champ, must tell you that there were no need in using a separate frying pan for the chicken, it can be done in the Wok, then put it aside and dispose of the used oil. Then add fresh oil with the sesame oil for completing the recipe. Bobs your Uncle and we washed less dishes!😊😉

Agreed, and it's worth finding. I make both gochujang and doubanjiang, and there's really a world of difference (not least because the former is made with soy beans and the latter broad beans).

Love your style and your recipes. Simple and accessible. You demystify the complexity of those restaurant dishes and it totally works. At least it did for me with the Szechwan Chicken. Scoured the internet, tried other recipes, yours is simply what came out best. But I do all the cooking in the work. Would ad 1/2 tsp of Chinese dark vinegar. Very nice. Tks

It's really only a Sichuan dish if you use both - their combined flavour is called mala, and the balance between them is fundamental.

Great recipe. I also add about a 1/2 cup of roast peanuts to the wok. Another option for the szechuan peppercorns, chilli bean sauce, and dry chillis: All are available on Amazon.

Was told that if you Velvet the chicken for more than 30 mins it toughens it up , would that be your experience or not ? Still end dish looks fabulous.
I thought adding heat to Seasame Oil made it really bitter? Only use at the end for flavour?

Tbh I have tried a few of your dishes and I don't see the point in dark soy sauce. It ruins everything and makes it too dark and rich. The experts don't use it.
People get mixed up and assume soy sauce = dark soy sauce, it is not. Use standard soy sauce and light soy sauce or all light, or all standard. The dark stuff should only be used very sparingly.
Don’t use metal spatulas or utensils on your pots or pans.
This is not "your version" of the recipe, nor have you "recreated it". You've simply lifted it from another video on UA-cam.

FAR too much oil. Categorically unnecessary and use olive oil, that is GOOD for you, not vegetable oil. This is unhealthy, fattening, salty and shit. And I know what I'm talking about.

I live in the USA...I really doubt don't care where British people shop for chili bean sauce. I've never heard of Tesco and I am sure anything sold on ebay is not a smart purchase.

Amazon U.K. has the dried chilli peppers and chilli bean sauce, not advertising them btw just that I looked for these at the local supermarkets they didn’t have the ingredients nor did their online versions 🙄. Don’t have a big Tesco near me...I’ll omit the paste anyway as it will make it too hot I will use normal black bean sauce with no dried chilli flakes in as opposed to hoisin sauce. Will use less dried chillis for the same and I’m sure it will be as tasty. The one thing you can’t do without here is the Szechuan peppers 😋 and all the other ingredients of course. Fab recipe from the Kitchen Sanctuary.
