Just a suggestion,I like to poach a little 'Sweet Potato'(for a few mins ,Yam to some!)then cook them a little,plus some add some heat from a Pepper or Sauce?&then add them to the Carrots with a little Honey..

when you lowered the temp you said it's "to low...about there" but didn't show or say the number. about where??? just sayin'. otherwise the recipe looks great. thanks

Carrots are already sweet and go so well with sugar and ginger. They do taste better cooked too !

Low is always a relative thing on different ranges. On my digital cooktop where 10 is the top end, low for me is around 2 or 3. Hope this helps!
Maybe next time chop the carrots ahead of time.....
