You’re welcome, and thank you too, my friend! Eggs are easy to make when it’s lower heat and butter or bacon grease, lol!! Let us know how they turn out ok!!??
@@MrCastIron I am so happy right now. the eggs turned out great! I've had this pan a few years and have been trying to get it to this point and for the first time I have been successful. A little side note: I wanted to include some scallions in the scrambled eggs, and wasn't sure how that was going to work because I usually saute the scallions first on their own for about a minute or so. So I did that, (after waiting for the butter to melt) and then added the egg on top of it. I wasn't sure what was going to happen, but I let it be, just like in your video and didn't start mixing it around like I always did before, and when i used the spatula to push it away from the sides, it WAS NOT STICKING at all! I'm very happy right now! Thank you, thank you from NY State!

Great video Mike, very useful.
Thanks, Dan!! I’m glad you found it helpful, my friend!! Have you ever had eggs stick in cast iron before!?
@@MrCastIron until I learned to set my eggs out for atleast 5 minutes they would always stick. I pull my eggs out of the fridge before I start heating the skillet and then like you I never turn the stove over medium. Once I think that the skillet is up to temp I also add butter then start messing with my eggs. After learning this I've never had eggs stick since. I believe that you did an excellent job on explaining how if the skillet is too hot they will stick like glue. I hope that you and your family are doing well and staying safe my friend.
Thanks, Dan! We are doing great, and I hope y’all are too! Lol, I pretty much figured you mastered the egg problem long ago too! Great tips and advice, buddy! Have a great day, my friend!!

Good job Mike , yes I’ve had my share of wrecking scrambled eggs, your absolutely right on your technique for scrambled eggs , they looked perfect, I like mixing a little butter and bacon grease for my eggs and medium heat like you said I’m using my Dutch oven all weekend for all my cooking I did a pork roast yesterday on my wood stove slow cooked all day it was delicious, this morning I’ve got bacon going then I’ll do the eggs in the same pot once I scrape the bits . Not just eggs, but ‘tatters too!! Low n slo…I do believe that’s why people got away from cast iron, they were willing to sacrifice quality and health for zip zap fast cooking n fast cleaning with coated pans and microwaves..the art of cooking with cast iron was almost lost, but THANK THE GOOD LORD we still have Mike, and a hand full of others, to shed a little light and help folks out!!
I use an 8 inch cast iron pan for making eggs. Never had a problem whether I’m making scrambled, fried, or egg whites. I do enjoy your videos 👍
Thats cool James! My wife has a specific 8 in skillet that she use for eggs too! I like a 10 but that’s me lol! 🤣

Excellent video Mike. That’s the way I cook mine. Another little trick that I have discovered, is to cook them slow as you pointed out, but put a cover over the pan. They never stick when I do that. Even when I don’t add butter.
You’re welcome, Dave, and thank you too, my friend! Yes, sir, a lid works great too, especially on sunny-side-up eggs! Thanks for sharing this with us buddy!

Yes, Grace, eggs can be a little tricky in cast iron, my friend. But I have faith you can do it. Just keep in mind to add a good amount of fat or butter and low heat is key to great omelets and scrambled eggs! Let us know how it goes, ok!?

Great tips on eggs Mike since they’re one of the biggest challenges people have. I’ve only had em stick when I rushed things, the cast iron will let you know who’s the boss hah.Hope y’all have a great week!
Thanks, Charley! Yes, whenever we get in a hurry is when cast iron stands up and says, hey, wait a minute lol 😂 😂

I gave away my non-stick skillets last year and bought a couple of basic Lodge pre-seasoned cast iron skillets. I cook eggs in them all the time with no problems. When I clean the skillets I let them dry for a few minutes on the burner and rub them lightly with oil. I believe they have become even more non-stick the longer I’ve used them.
I know this is a 2 year old video but I want to add my 2 cents with another little tip. It's best to NOT add cold eggs (or cold anything) to the pan. Bring your eggs up to at least room temp before cooking. Either set them out a couple of hours before use or place them in a bowl of warm/hot water from your sink. In other words, you don't need to heat water up on your stove top. Hot water from your sink is plenty hot enough. You just want to knock the chill out of those eggs. I recommend allowing meat to come to room temp before adding cooking as well. 😊
Your eggs were perfectly cooked, just the way that I like them. They looked delicious 😋
Thank you, my friend!
Great video with the basic tips to succeed while cooking scrambled eggs. I use the same technique for the fried eggs but I add an extra knob of butter and works fine. Remember what the French say: never is too much butter. Cheers
Thanks, Juan! Lol! Yes, we can never have too much butter! Here's a guide I put together with a few more tips too! pages.mrcastiron.com/castironbeginnerguide
Interesting! How seasoned is your cast iron pertaining to layers? I'm new to cast iron, picked up a Lodge reversible griddle/ grill double burner plate recently and I'm loving the experience!
I'm a tech enthusiasts having spent lots of money on fancy Smart grills/ griddles from companies like De'longhi, Blackstone etc. But none are as reliable, safe or healthy as a good old fashion Cast Iron surface!
I really appreciate your channel, it's extremely helpful covering/ answering literally all my questions in one swoop!
I'll definitely take your advice by trying your technique next time I make eggs, being their always sticking in my case.
You’re welcome, and thank you too, my friend! I am happy to hear some of our videos have helped you. I can’t really say how many layers my skillets have because each time you cook with them, it adds to it. And I use mine nearly every day. Give those eggs a try and let me know how it turns out, ok!? I just learned that this was a possibility, I thought my cast-iron was seasoned perfectly from months of use but BOY did those eggs prove me wrong, never had to scrub on something harder in my life
I hear ya. A little butter helps when cooking eggs. Too high of heat can cause trouble if you don’t keep a close eye on them too. Thanks for sharing your experience with us my friend!

LOL. Wish I had seen this this morning before cooking scrambled eggs. I don't know what happened! The 7 inch I usually use for my eggs has never given me a problem. Hey my brother this an excellent video thanks for sharing those tips . Cheers!
You’re welcome, and thank you too, bro!
I always add a splash of water to my uncooked scrambled eggs, and it makes them more fluffy and tender. I only mix them until just blended, so that a very small amount of color variation comes out in the end product, just for interest and it makes them look authentic and homemade, too. Then, I gently chop (or interfere with) them a little while cooking, in order to break up the cooked bottom and let the uncooked parts touch the bottom as soon as humanly possible. This helps them cook evenly while preserving their softness and the goal is to make them look a little like a pile of yellow large curd cottage cheese. The benefit of this quick method, too, is that you use a hotter pan, which I think helps a little with the non stick properties of the pan. It's quick and easy and the splash of water prior to cooking is the key.
I'm vegan but vegetarian 0-3x times a year when I have cheese or eggs, so it's been a while since I've made scrambled eggs, but I can guarantee that when I made scrambled eggs last, I used cast iron or stainless steel. I seem to remember the trick was to use enough oil before you add the eggs, but I also thought that it helped to start with room temperature eggs? I don't know, but I love making scrambled eggs, and I just like them plain, without anything at all mixed in, except salt and pepper and, at the most, a small amount of aged cheddar as an accent for flavor only, which goes well with butter on top! Green onions are also good on top, but I just don't like them inside my scrambled eggs. Now that I think of it, I might like them if they were first "flash sauteed" in the pan prior to adding the eggs, just so they get enough oil coating them that they don't "adhere" to the eggs and are separate a little in the scrambled eggs. Hmm, gonna have to try that. You got me talking about food now and I can go on forever, lol! Thanks for this good show because it's essential(!) to know how to cook scrambled eggs in cast iron!!!
I have had eggs stick to other types of frying pans before. That is why I butter the hxll out of my frying pans before frying eggs in one. I have recently found my grandmother's cast iron skillets and intend to learn how to use them.
Clara Ellison 2/3/23 - 6/23/17 Rest In Peace. We love you and miss you.
I heard that, Daemon! Butter is so handy in cast iron when cooking eggs, so they don't stick!!
Mine sorta stuck but not really. The eggs came out ok but the cleanup on the pan was harder. Tiny bits of egg in the little crevasses made it hard to scrub em out even using my stiff bristled brush. Had to add water and back on the heat and then clean
Eggs are a little tricky to master but with low heat and good fats they usually turn out perfectly! Thanks for sharing your experience with us my friend!!
Thanks for those great tips, it's something I was always struggling with.
You’re welcome, my friend! I’m happy that this may help you cook better eggs in cast iron!
I make scrambled eggs in my cheap 6” cast iron every morning. Proper preheating was the thing that I had to figure out (I thought it was my seasoning that wasn’t good enough but I was wrong)
Yes, preheating the skillet and the right temperature sure makes a big difference with eggs! Thanks for stopping by and checking it out, my friend!

Dearest Mike, I didn't even know who you were until today but you are my newest hero! I have spent the afternoon watching your videos because today I finally decided to begin the 'Cast Iron Adventure' and went out and bought myself a Lodge 12" skillet. Your videos are just what this cast iron newbie needed and I can't wait to start cooking! I feel empowered by the knowledge you have kindly shared with us and I also feel better about having a cast iron pan that will be properly seasoned and ready to go in case we suddenly have to cook outside on a cinder block rocket stove which would have killed my useless teflon-ish fry pans. Crazy times seem to be upon us... You are the best! Thank you!

Thanks again for checking out our channel, and if we can ever help you in any way, don’t hesitate to reach out to me anytime, ok!?
@@MrCastIron I followed all of your instructions and I cooked 3 pieces of bacon and then I cracked in 2 eggs into the hot bacon grease. I was so confident at that point that I actually had the eggs over easy. What a treat!!! I am officially hooked. I haven't had eggs this tasty since I was a kid - crispy outside with a runny yoke inside. They cooked gently but briskly, if you know what I mean. I haven't cooked real bacon in years. My new pan will be seeing bacon more often now. Lodge Cast Iron has a nice short video on cooking in your pan the first time. It made my mouth water watching it. www.lodgecastiron.com/cast-iron-101/cooking-with-cast-iron Thanks again for your wisdom and tutorials!
When I first went to cast iron for cooking everything stuck! Took a few failed attempts before I figured it out (before UA-cam) but you can’t be afraid to make mistakes.
👍🏻👍🏻👍🏻
Thanks, Chris! I know you cook yours in cast iron, don’t you!?
I always cook mine on medium heat, with a light coating of canola oil non-stick spray. They always come out just right. Had some for breakfast just a little while ago! 😁
I saw a video of a guy with a new Lodge skillet, who tried to cook eggs with it blazing hot. Naturally, they stuck terribly, and he blamed the rough surface. And what did he do? He took a sander to the skillet to fix it, and you know the process. I commented that there was nothing wrong with the skillet, he was just using it wrong. He replied, graciously, that he liked the smooth surface. We each have our preference, but personally, I would not go to that trouble.
Thanks for sharing that, Mike. And yes, you’re right. You don’t have to take a sander or a grinder to cast iron to be able to cook eggs or anything else in it, for that matter. I certainly don’t suggest or recommend sanding or grinding because cooking in them will smooth them out naturally over time.
@@MrCastIron I have a Lodge 11" square griddle that I've been using for about two-and-a-half months, and in the center, where most of the cooking is done, it is already completely smooth.
That’s cool! It will smooth out more too!
using the cast iron skillet is a no-brainer. I never experienced food sticking on my cast iron the first time I used it because all you have to do is to properly season it and execution. I can make my scrambled eggs perfectly in cast iron with only a thin layer of vegetable oil over medium heat and leaves without a trace of fond. I'll just pour my beaten eggs and turn off the heat as quickly as possible. then gently stir it with a silicone spatula until your desired doneness. just like those non-stick Teflon-coated pans do. In fact, cast iron works better than my well-seasoned carbon steel wok. it also does an excellent job with my grilled pork belly. I don't even have to grease it and just wait for the fat to render before its starts to caramelize.
You are right. Eggs are not hard to cook once you know how. Thanks for sharing this with us, my friend!
Looks delicious ❤TFS

I wish I found this video at the start of this week. Been struggling with a little bit of stickage (not too bad, but enough to be annoying) with my scrambled eggs that I've been putting in my breakfast sandwich. I think the error of my ways is the fact that I'm sautéing the bell peppers first before I put the egg in and the skillet is too hot.

Mr. Castiron, can you use cooking spray in place of butter or bacon grease in some recipes for those who have cholesterol or cardiac issues?
Yes you can for cooking. I use a cooking spray when I’m making eggs in a egg ring. I don’t recommend cooking sprays for seasoning cast iron though.

I have watched on another Channel the guy using Pam for cooking eggs on seasoned Cast Iron. He was demonstrating that when using low heat on a seasoned pan you don't need much to keep eggs from sticking.
Thanks for sharing this, Jeff. I rarely use a spray but it is true that a well-seasoned skillet heated adequately along with oil or fat will increase your success in cooking eggs!
That’s not scrabbled eggs , more like a omelette
Yeah you’re right. I didn’t chop them up did I?
Saludos a los colombianos que estan viendo estos videos como yo despues de comprar sartenes victoria 😉
That’s cool! Welcome my friends!!
USing butter is the trick to getting eggs to release on cast iron. What is in bacon that sticks to cast iron even with butter. The bacon is not sticking, but maybe it is the sugar coming out of the bacon.
That’s a great question, Keith, and thanks for asking it. But yes, you’re right butter is the trick to cooking eggs in a cast iron skillet to make them release easily. As far as the bacon sticking to cast iron, it is most likely the sugar in bacon because all bacon is usually sugar cured instead of salt-cured like they used to do, and so we know sugar burns, and when it burns, it sticks to the cast iron.
I'd say it's the water in the bacon that makes it stick. I sure do miss when I had meat without water from when I used to butcher my own. Water soaked meat makes you have to be very careful when you cook in cast iron.
Thanks for sharing this with us Jerry!! It seems like all meat these days are water soaked. It sounds like a weights and measurements issue to increase profit, right!!??
@@MrCastIron I would say profit is the reason but, the meat industry has other claims. Personally, I would rather have meat without water added and in a lot of countries it's illegal.
Yeah, I’d say you are right. Our fresh meat has no water added except for washing it before cutting and vacuum packing it!
I always claim that cast iron was the original nonstick skillet. Your tip about making sure the Pan is hot is probably the most important
I would have to agree with you! Rarely do I have anything stick in my pans. Cast iron was around long before Teflon, lol! And yes, preheating is beneficial. Thanks for sharing this with us, my friend!
That's the #1 thing we hear on the Cast Iron Cooking group on Facebook: "My eggs always stick to the pan!" And all of these UA-cam videos demonstrate the non-stick properties of any pan, including cast iron, with "the egg test."
Lol yeah, I hear ya, Eric! That’s why I decided to go ahead and make this! Hopefully, it will help someone!!
Is it the same concept for pancakes as it is for the eggs?
I'm new to cast iron 😅
Yes basically but with pancakes the griddle has to be at least set to medium-high.
Only cook eggs in cast iron or carbon steel. My stuff is well seasoned and eggs don’t stick. It’s been a couple of decades since I’ve had issues with eggs in a cast iron skillet.
You got that right, Big Lew! You know I did that intentionally, don’t you!? Lol 😂
