Greetings from Bangalore, India. I just chanced upon this lovely video. It is one of my go to salads. But I hadn't thought of heating the sauce to make it concentrated. Also I have not added ginger to either salad or dressing so far. Salads being an imported cuisine to us, I love learning to make different types. It so happens that I have half a roasted beet sitting in the fridge after using half yesterday. But don't have arugula. Instead I have oak leaf and rosso leaves. And oranges from my single tree. Will make this for tomorrow dinner then. Will follow your recipe except for arugula... Thank you for sharing.

Just to update.. I made the beet salad tonight and the dressing by reducing the orange ginger sauce. It was so good. Thanks again.
