I took some tomato sauce and added cream to make tomato soup and the cream curdled . I was talking to a group of women and one mentioned baking soda. That was an ah ha moment. I remember that my grandma added just a dash of baking soda to her tomatoes before adding the milk when making soup. That worked. No more curdled milk.
I just watched a video of Becky from Acre Homestead canning tomato soup and it looked so good. She roasted her tomatoes in the oven. Prior to that she blended everything so her soup was super smooth.
I watched the Mennonite Kitchens tomato soup recipe, and it looked yummy! I hope you like it.❤ It's almost time for deer hunting season. Then you can fill the freezer again!
If you want to kick that tomato soup up a notch when you take it out of the jar to heat, add about a teaspoon and a half of cognac, 1/4 heavy cream and chopped basil, heat it slowly when adding the heavy cream. That base you made is the same as before I add the ingredients I mentioned, I puree some and leave some chunky though. I agree on not putting fruit and veg in the freezer to can later, did it for the first and last time this year, to hot to can here this summer, I just lost it all, had a very rare hurricane in Maine and power was out, all fruit and veg thawed, all meats still frozen thank heavens, beautiful fruit. Next time I will can it if my eyeballs are sweating.
I have a Tomato Bisque recipe created by Tanya Tandoc . It's not a canning recipe. She is no longer with us but she had a restaurant in Wichita Kansas called Tanya's Soup Kitchen. This is the only tomato soup I like. Absolutely yummy. 1 28 oz can crushed tomatoes with juice 1 6oz can tomato paste 1 cup water 2 cups heavy cream 2 t dried dill weed 1 t garlic powder salt and pepper to taste 2 T or more to taste of sugar. Put all in pot and whisk together, bring to boil then reduce heat and simmer 10 minutes.

Looks like my kitchen today. I had 10 1lbs. (16 cups) of tomatoes from my garden that I cooked down and made a purée. I am currently processing the 4 1/2 quarts they yielded…it is 9:50 pm!

My husband hates garlic. Do you know if I can omit it safely in this recipe or other canned recipes? I’m having a hard time in my such for this answer?
I don't understand why you would go through the trouble of making the tomato soup without tasting it. You might have decided to add more salt or pepper. I adjusted the recipe I made to my liking. I do hope you like yours so it's not a waste.😢

The perfect time for taste testing is when you reheat to serve. You can make any addition(s) then.

The brown sugar should take care of any acidic or bitter taste. Sounded and looked delish :-)
