  • These tender, moist muffins, with just the right amount of banana flavor are really tasty. They’re easy to make and perfect for breakfast, lunch box, and afternoon snack.
    Fast Banana Muffins
    (6 servings)
    Ingredients:
    2 ripe bananas (127g after peeling)
    2 Tbsp (30g) grape seed oil / vegetable oil
    1 Tbsp (15g) sugar
    1 egg
    ¾ cup (112g) bread flour
    1 tsp (4g) baking powder (Aluminum-Free)
    1/4 tsp (1g) baking soda
    ¼ tsp (1g) salt
    Bake at (425F/220C) for 12 -15 minutes

    Instructions:
    1. Preheat the oven to 425F/220C; Line a 6-cup muffin pan with muffin liners
    2. Prepare 2 ripe bananas
    (about 127g after peeling),
    Mash the bananas
    . Add 2 tablespoons (30g) grape seed oil
    ,1 tablespoon (15g) sugar,
    one egg
    . Whisk together.
    3.
    Add ¾ cup (112g) bread flour,
    1teaspoon (4g) of baking powder (Aluminum-Free),
    1/4 teaspoon (1g) of baking soda,
    ¼ teaspoon (1g) of salt
    . Stirring until well combined.
    4. Divide the muffin batter evenly among the muffin cups.
    Move it to the preheated oven
    , (425F/220C) bake for 12-15 minutes,
    or until risen and golden brown.
    5. Let the muffins rest in the pan for 5 minutes,
    then place muffins on a cooling rack.
    Let cool slightly and serve
    .
