It was given to me, they are from Xiamen. However, you can buy the normal ones from the wet market. They should work fine too.

Best will be overnight, kept in the fridge. If no time, then 2hours will be good.
Chef Sam can add fish like batang? If so when to add during the cooking process?
Yes it's OK to add batang. Just add it 2-3min before it's ready.
Uncle Sam, the lala when you soak, is it in salt + water? Or It just plain tap water?
It's water + a bit of salt.
