Looked good Tommy. I do them that way on the SmokeFire with mesquite pellets and it turns out great. A little more chew than a steak but an enjoyable and flavorful chew. Like you said, the beefy taste really shines at medium rare with a nice sear.
@thegalleryBBQ Sorry! On the back side of the shelf of the 800 there are two prongs to wrap the power cable around when storing it. I don't see any place on the xt to wrap up the power cord on. Do you just store the power plug on the bottom shelf when it's unplugged? Or am I missing it somewhere?

Thanks! A question - I got the Pizza accessory for the XT, and it does not come together like your 1050 Pizza accessory does, (The heat diverters don't connect) if you have advice or a link on how to install the MB pizza accessory on the gravity XT that would be great.

Ill tell you what.... fire up the XT and grab just the stone. Go bottom wrack and get that stone up to 500+f.... Enjoy your pizza.!
