For the quicker recipes we just get the fire going and burn it out as we cook. For the longer recipes like larger biryani cooking we keep adding wood as necessary. The maintenance of the fire is an art in itself and you have to have years of practice to make sure it doesn't die on you (will make the food too smokey) or its not too hot. You can also control heat by moving the pot off the flames and back onto the flames, and also by how much you stir the pot...
This is my favorite meal aunty Gaithree . A dry chicken braise beats anything .. my mum used to always cook this with extra onions and no masala..I can still taste it , that’s how divine she made it 😂 Thanks for bringing back fond memories aunt ❤
