Making mutton (lamb) biryani: The one-pot recipe you’ve been waiting for, just in time for December!

- Mutton biryani with soft cooking lamb and melt in your mouth potatoes cannot be beat! There is no argument that this is going to be the favourite of many many people and we tend to agree!
Ingredients
1kg Lamb meat, cut and washed
Marinate overnight with:
1 tsp crushed ginger and garlic
1 tsp BBQ spice
1 tsp chop and steak spice
1/2 cup maas/sour milk
1 tsp Worcestershire sauce
1/2 cup biryani dhal soaked overnight in tap water
For braising the biryani
1/2 cup oil
3 potatoes, quartered and coloured with egg yellow
2 onions sliced - 1 for braising, one for garnish
1 curryspoon mixed masala
1 tsp hurdee powder (tumeric)
1 tbs rough salt (to taste)
A handful of curry leaves
A few sprigs of fresh thyme
1 large cinnamon stick
2 bay leaves
3 green elaichi (cardamom)
2 Black elaichi (cardamom)
1/2 tsp somph seeds (Fennel)
Star anise (broken pieces)
1/2 cup frozen peas
2 cups rice (soaked)

Hi, we did a quick search and it seems that Haldi (Tumeric) is very similar to Borrie - they have the same colour and both offer medicinal properties. However the article I read says Borrie add a slightly bitter taste and therefore advises caution when using as a substitute.

This Biryani looks delicious. I will try this method this week. Can you advise why no biryani spices are used to marinate or cook the biryani? I am excited to try the chop and steak spice.
We did not use them to marinate but we did use the biryani spices individually in braising the biryani. Cinnamon sticks, bay leaves, saunf, elaichi etc are all part of the biryani mix. Hope this answers your question.

If I don't have an oven... How else can I make it aunty?
You will need to allow it to dry over a very low heat on the stove. It may catch on the bottom so it will need to be watched but sometimes those crispy bits at the bottom are the best part!

Hi, biryani dhal is a lentil also known as Black Mansoor dhal. Most Indian grocery shops would label it as biryani dhal.

Great job! Yes you can definitely finish off on the stove top. Also a biryani that's a little "wet" isn't a disaster either.

We use 150 deg C on our oven. It is more to dry out the biryani a little bit. You can adjust your oven accordingly.

Hi it is brown lentils or masoor dhal. Depending on where you buy it it could be labeled any of those 3.

I enjoy watching you cook, so I will try this method, I have never used Winchester sauce, but also I still don't know what rice you are using6, because basmati rice is like cooks within seconds, I'm so sorry for all these question. I just enjoy your method, the color of you food is beautiful, and I have done the masala mix, it's perfect, I just didn't add food color, I don't like it, and also tell me if you use saffron, I use it a pinch
Hi I use normal long grain rice - we only get Tastic or Specko here, usually we use Tastic. For basmati rice I would use the layer method like I showed with the chicken biryani (ua-cam.com/video/7vPwXY5PFLY/v-deo.html) and cook the rice and curry separate and then layer it in the end and place into the oven for a short time. Alternatively if you using the same method as this one, cook the mutton more done and then add the rice for a shorter cook with less water than I used - that will leave less gravy to dry out effectively, reducing cooking time.

@@cynthiamatthews6057 I think what happened there is that the oil did not cover all the mangoes. The mangoes exposed to the air will then tend to get mold. It could also be from the mangoes not being fully dry. What colour is the mould/mildew you see?

Aunty why you don't put chillies in any of your curries?
We normally get the heat from the mixed masala that we use, which also has pure chillie powder. One can always add chillies for additional heat if you prefer.

Biryani dhal is also known as brown lentils or masoor dhal. Most supermarkets stock brown lentils these days

Yes we’ve had that feedback. Peas is more used in pilau we are told. But this is how we’ve always made it I guess. And the peas do add a nice different colour and taste

Hi Cynthia. I have cooked herbs twice in videos. The first is pumpkin herbs fromt he garden: ua-cam.com/video/zzfi50bIZPg/v-deo.html

You can follow either of those recipes for the herbs. If you have fresh dubla beans you can add it with the herbs if you drain your herbs very well. If you normally cook your herbs with some of the water you used for washing the herbs then the excess water will result in the dubla beans becoming too soft if added with the herbs so delay the addition of the beans.

First question, wen putting the breyani in the oven do we put it on grill meaning the top element of oven or on the bottom oven element to cook. Hi. We use the settings we usually us for baking which is the top and bottom element. I use 150degrees and keep it in the oven for about 30mins just to "dry" out the biryani. You have to keep the pot lid on or you may dry out the rice at the top of the pot too much.

One additional tip - if you find that your biryani is already dry before putting it into the oven you can also add half a cup of water along the sides of the pot just o make sure it doesn't catch on the bottom of the pot.

Hi Angie, sorry for the late reply. We were down in Durban for a wedding and now only catching up. Depend on how good appetites people eating have we estimate 3 to 4 people per kilo. so for 20 people you will need 5 to 6 kilos of chicken. Also depends on if you are using fresh or frozen chicken (frozen chicken is 15% brine and will shrink when cooking).
