✨Ingredients✨
For the Cake:
360 g biscuits (Lotus Biscof)
210 g dark chocolate, 70% cocoa
100 g butter
150 g heavy cream
100 g honey
30 g dutch cocoa powder
3 g salt flakes (fleur de sel)
For the whipped ganache:
150 g dark chocolate, 70% cocoa
300 ml heavy cream
👩🍳Instructions
✅ Line the bottom and sides of a 7-inch cake pan with parchment paper. Slightly grease the bottom and sides of the pan with butter/oil. Set aside.
✅ Using a rolling pin crush the 1/3 of biscuits to make a crumbs. Break the remaining biscuits into large pieces. Set aside.
✅ Into the big mixing bowl add chocolate and butter, melt using a double boiling method over the low heat. Stir until the mixture is smooth.
✅ Mix cocoa powder and heavy cream in the small pot and bring to a boil. Pour it gradually into the bowl with melted chocolate, whisking after each addition.
✅ Add honey and mix everything until smooth and combined.
✅ Fold in biscuits. Stir until biscuits are completely covered with chocolate mixture.
✅ Transfer the mixture into the pan, distribute evenly. Lightly tap the pan on a solid surface to get rid of any bubbles.
❄️Freeze for at least 3 hours to set. Best if it can be let to cool overnight in the fridge.
✅ Decorate the cake with whipped ganache. Dust with cocoa powder and cookie crumbs, if desired.
✅ To make cutting easier, try running your knife under hot water before cutting the cake. Enjoy!
For the whipped ganache:
✅Pour the hot heavy cream over the dark chocolate, let sit 5 minutes, then stir until combined. Cover in contact with cling film.
❄️Refrigerate overnight.
✅Next day whip until stiff picks form.

Does anybody know a gluten-free replacement for the lotus cookies? It looks like Mi-Dell ginger snaps would have the same texture, but I don’t know if the flavor would work? I’m gluten-free and really want to try this recipe, it looks absolutely amazing!
