Every year in the past I flew to Chongqing at least once just for the authentic hotpot. Unfortunately I didn’t get the chance in 2020 since I was “trapped” in HK for the whole year. Hopefully I could visit the “hottest” city again in 2021. Have a Healthy and Happy New Year Nico!

People in Chongqing, in fact, all people in Schechuan Basin, need the spice to drive off the moist from the environment. They are literally soaked in moisture from the air and they need the spice to counter it. People in Canton, or people in Shanghai, are not that much into spice, because they are in the coastal area and the coastal air is warm and circulating from the wind.

Well, Chongqing Hotpot was the only one where I literally didn't had a bad day afterwards. Only since Chongqing I eat more Hotpot but can't miss the special spice anymore like the pepperoni oil.
We plan to do that this year as it's not easy to get them ready with subtitles but we are hoping to have more time this year to do this. Happy New Year!!
Delicious hot pot! Too bad it is only breakfast time in Texas! No pork tripe? Add some cilantro into the pot. Yummy! The numb and hot dish is great to increase you appetite.
When you go for a hotpot with Chongqing locals, don't say you want to order the Yuanyang Pot, which is divided into half light soup and spicy soup. You will be "despised" and considered as a bummer. lol But actually for most of the Chinese in other regions that can't bear with much spicy, Yuanyang Pot is our "savior". And I finally for the first time know from what the lady said that Yuanyang Pot is inspired by the clean and muddy rivers, instead of out of the care of non-spicy person.
Tourists can not understand why people in Schechuan Basin are so crazy about spice. That is because they only visit the area for couple weeks at most. If you were to live in the area for months or years, and you are soaked in the high moisture environment, you can not live for a day without spice that keep you sweaty and drive the moisture out from your body. You will feel tired or frustrating, like staying in the steamy wet bathroom for a very very very long time.

FYI, No doubt that the Sichuan hotpot style was originated from chongqing(used to be a part of Sichuan province ) area by the boat dragging workers along the Long River However, the idea of hotpot was brought to the south of Mongolia by Mongolian during the Mongolian invasion to the Song Dynasty back in 13 century , rumors say they always brought their goats during trips, and killed them , sliced and boiled in a pot for meals , u can still find boiling sliced goat meat hot pot restaurants in Beijing (a lot) or the coppery goat/beef meat hotpot restaurants in qinghai or shanxi provides nowadays which were heavily influenced by that, and,, THAT, that is the originally form of the hot pot, there were containers to boil food back in thousands of years ago but not the same of this kind of eating style occasions( u can still find the franchise restaurant called Little Mongolian fat Sheep hotpot restaurants in Shanghai California or New York) also btw, a lot of Sichuan people dna test has 10~70 Mongolian dna, while they have the mariority Han race documented or they dont know, fyi and there was no spicy peppers in asia till the qing dynasty imported from americas, and this spicy style of Sichuan hotpot was formed as the story ur telling in the video, thanks to the Grand voyage and ur sharing

@@josephhill2868 most Chinese even nowadays don't even fully understand the difference between Chongqing and Chengdu. It makes sense they said its Chengdu because Chongqing used to be part of Sichuan and ppl always think of Chengdu as the representative of Sichuan culture.
Sigh, left hometown to North America makes me think Holy Molly my city is so huge lol, this city so called one of the biggest city I'm currently in, you could prob count how many restaurant are there, like couple hundreds? Lol
Haha oh I found the grid one hot but the double one was ok. I love vegetables in it but they are so much hotter to taste as they absorb the spice so much. I haven't had little fish in it only these fish balls which were tasty, I'll have to look out for them next time.

That's the CQ hotpot way of spicy. Unlike Indian or Tex-Mex, this one doesn't hurt entrance that much, but it does the exit a lot.

The potatoes and the little frozen fish are my favorite! Strangely, I don't find it that hot? I've had Indian food that was hotter.

Hopefully we will get a chance to go to Chengdu this year.
