Very nice of this guy to let you come in and take this much time to go through his project work. Very lengthy video but I watched it all. I love this type stuff seeing behind the scenes and what the craftsman have to say about their product and what they are working on. Very good Jeremy. Don't worry about the trolls full of negative comments. It's obvious the guy knows what he is doing. People not there do not know but what they see. He wouldn't allow you to watch him weld with clear safety glasses. In most shops, they have different welders from good better and best. Again, you weren't there and do not know all the equipment this guy has. I can see his work and it looks good. Anyway, nice report and thanks for bringing it to us.

When you tow the trailer, you want the open end faces the rear. If it was in the front, the air pressure of driving fast would blow the ash through the cook chamber and contaminate the grates.

Welding has a very interesting history, the invention took some time to refine and find an application!
I like the fact the he leave the calculations and drawings or rough blueprints on them. That is pretty cool. I can't wait to get my own off set smoker.

Awesome video with great information. I have a little experience welding a steel bridge for a competition in college and was considering replacing my Horizon smoker with a custom built one. Only thing is I don't have any welding equipment :( That 16 sqft flat top is so freaking awesome! such a great idea

Luckily, a local fabricator (Lake District, UK) is going to make me one. Definitely want about a 140 gal reverse flow. Simply can't wait!

On the subject of reverse flow vs. standard flow, if you use good tuning plates you can control the temps really well. I have a 24 x 36 stick burner and I can cook with a 5 degree difference from one side to the other.
Hey pete. I get you. For me though, I prefer standard flow for the outstanding convection it produces. I don't think I would do the tuning plates in a little pit because it causes a lot of radiant heat to cook the meat sooner than it would otherwise. That is how it works on my little smoker at least.
I would appreciate to hear Eric's explanation of why smokers mostly have the firebox on the right side.
If it would be trailer mounted. Wouldn't it be more logic to have the doors on the pavement side?
That's an interesting question! I will ask him, but what you said makes sense. I would think it is best for the smoker to have its doors facing the sidewalk if you parked on the street. That way you can check your BBQ without being in the street.
This man's question just blew my mind. I never thought of that.
I feel like it is important for the door to be on the end of a long fire box. Thereby keeping the hot fire further away from the product.

Great video, and I love all of the questions and answers. This is rather timely because I am going to retire in nine months and plan to buy a quality smoker. However they are so costly I decided to buy a decommissioned propane tank and do what I’ve never done before, build an offset smoker! Please keep the informative videos coming!

Nice video. I’ve been watching your channel for a while starting from your Old Country smoker. I also know that you just have your 500 gal. Fatstack cooker and actually watch your first cook which I think very brave of you to do it on a catering event. Great job though! Anyway, I’m also a BBQ fanatic just like you and I find Fatstack smokers interesting. I think Eric is right about the difference between a traditional smoker and a reversed flow smoker. Actually I started with an Oklahoma Joe that I got from Lowe’s and just like you I thought I got the best smoker at the time. Well, after burning a lot of meat and watching a lot of videos, my wife finally agree to get me a more descent smoker. I have a reverse flow made by Shirley Fabrication out in Tuscaloosa Alabama and its really amazing compared to my Oklahoma Joe. Back to Erick’s theory, I completely agree that when it comes to smaller smokers, reverse flow are more efficient than traditional smokers. It’s easier to manage the temperature in my opinion because of the solid plate under the meat . The downside though is cleaning the pit because there is no access under the plate. Overall I like my Shirley but if ever I need a bigger smoker, I would love to have just like your 500 gal. Fatstack smoker hands down. Keep posting videos my friend and hope to meeting you someday.

OK, assuming the tank size is 1000 gal, 750 Gal, 500 gal. A person wants to get one that can do everything from catering for large groups, but also that 1 brisket meal for a family get together on an off day. Can you efficiently produce one Brisket in a large cooker? Maybe a rack of ribs or so. Also I have thought about a commissary cook where neighbors can offer meats and you cook it off for them and they pick it up at a time. I had a neighbor that had several sizes and he started cooking on Friday night, and delivered by noon on Sat, and cooked all night for Sunday orders too. Thoughts?
I am looking at a gently used reverse flow, very similar to the octagon shape near the beginning of this video. I have a concern about the location of the stack. Instead of the exhaust manifold welded near the bottom grate, it is just a piece of square tubing welded on top of the octagon. Will that have a negative effect? I feel like that is a design flaw, hence why it is gently used.
So do they by any chance ship to georgia or gotta make a road trip to Cali?

@42:50 he's hiding fabrication tricks! All you have to do is use a cardboard template and then apply it to the fire box to see where you have to cut to fit. 😉

can you make a video talking about different smokers like electric and gas and talk about advantages and disadvantages with flavor. i cant find a video talking about taste differences and like science, like in one of your videos u talk bout clean burn witch i dont think electric and gas can do right?
Here's all you need to know. Electric smokers suck, gas smokers suck ( good for thanksgiving day turkey though), charcoal smokers taste like black girls butthole, pellet smokers are for soccer dads that dont know what they are dong at all. Offset smokers rule.
Hey that is an interesting idea. I could do a video just talking about the differences or maybe one where we actually go look at those different smokers. Short version: pellet smokers are the easiest way to BBQ anything. They produce good flavor but not the best. For the best flavor you want a real, wood-burning, smoker.

I just bought an old 500gallon propane tank for $100 that I will be turning into an offset. In other words selling a 500gallon offset smoker for $10,000+, like fatstacks does, is a huge mark up. If anything, they should be sold for $5000-$6000
Just my opinion.
Always paying for time my friend. Plus the rest of the steel involved aside from the 2 tanks.
