Ingredient:
1. Chopped pork 200g.
2. Shrimp 100g.
3. Black pepper 2tsp.
4. Chicken egg (1).
5. Chopped carrot 4tbsp.
6. Chopped garlic 1tbsp.
7. Corn starch 1tbsp.
8. Fish sauce 1tbsp.
9. Green onion 2tbsp.
10. Oyster sauce 1tbsp.
11. Sesame oil 1tbsp.
12. Sugar 1tsp.
13. Wonton wrapper.

The chop lard is what makes it non drying and slightly chewy which I’ll always do lolls but to each thier own

Just made these! I recommend seasoning with salt generously otherwise it’s quite bland. I also added some dried shiitake mushrooms! Aside from salt, this is a great recipe!!
@Amelia Barbo I’m Cantonese and normally don’t dip shu mai in soy sauce! I normally dip in a black vinegar ginger sauce or hot chili oil :)

Steam only has one temperature. What matters is the length of time. The longer you cook it, the higher the chance of over-cooking. Try 7 minutes, then see if it's ready, if not add one min. Repeat until cooked.

I like it the same way but I add garlic, a little chicken boullion, leave bit of the shrimp slightly thick to get that texture in, and place banana leaves under them to steam! Yum! I also add baby shrimp on top of half instead of the carrots!

制馅时放入调味料的顺序应该是:
第一步:胡椒粉味精,酱油,料酒黄酒(鲜肉不放也行),姜(或葱姜水)这些水质水溶的调味料要先放好,使其与肉,特别是瘦肉,尽量的无障碍的渗透调和,使之真正入味;需要打水,打高汤的也是此时加入;完成后,肉馅应该是味道很均匀的一体,就像一锅糨子一样。
第二步:放入主要的辅料。比如鲜虾肉,打好的鱼肉馅,等等;这时用已经是调好咸口了的肉馅,去包裹,腌味这些辅料,使之有咸鲜口味;
第三步:然后,加入葱花,加入香油,芝麻油,各种油类;调匀。
第四步:放入菜蔬类副馅。
这个顺序的技术要点是:明确的用水溶性调味料,先与水分为主的瘦肉腌味,这个时间要长一点为最好;比如今天调好味(冰箱冷藏),明天再制作,最香!能够充分发挥调味料的作用! 然后,再加入油脂类的调料,也不会影响水溶性调味料与肉馅的腌味过程了。

I made these too but replace salt and pepper with “adobo seasoning” where you can buy them everywhere in the states (all sort of herbs). If you like flavorful dishes, I highly recommended this seasoning as I use it in everything. God’s love and blessings to us all 🙏❤️😇

@@paulking962 I don't really use eggs. When I mix my meat for the filling, I always mix it just as it is because the more oxygen released from the filling can extract the myoglobin from the pork meat and binds it with the shrimp and other ingredients within the filling

What cut of pork do you use for chopped pork?
The best cut to use is usually the fatty cut mixed with dark meat, like the shoulder cut. Hope it helps.

Hi my friend, maybe you're just not packing the meat tight enough when forming, squeeze the wrapper to the meat at the top, so it holds better
