Today, I tried your 100% poolish recipe using high protein (13-14%) Thai bread flour (TFM Spaceshuttle) for the poolish and the rest was 5 Stagioni Pizza flour. A total beginner in the Pizza making arena but today’s Pizza was the best I have achieved so far, Thank-you. Having experienced the heat and humidity here it would be great to see you make a few Pizza’s here and learn what obstacles you had to overcome due to the heat and humidity.
