I'm seeing some comments about herbs for marinara sauce. My mother was a masterful cook and used fresh parsley and oregano for her winning marinara sauce. Everyone LOVED IT!!!! As with all recipes, you can make alterations, but I know this particular recipe is a WINNER!!! Buon Appetito!

Marinara sauce isn't a typical in Southern Italy but it's an Italian American recipe, usually Italians don't use oregano (even if it's just a pinch) in the pasta sauce, we use basil instead, oregano it's for pizza sauce.

I agree with gio about the basil, but me thinks that an even bigger mistake (don't tell your mom!) is not adding any sugar! Canned tomatoes, no matter what the brand) will taste "canned" unless you add a touch of sweetness to them, IMO! Just a pinch, or to taste! You will taste the difference! Thanks for sharing your mom's recipe with us! BTW, to prevent most of the tomato splatter, invest in a splatter guard. It can be had anywhere and is dishwasher safe. Good luck!

Dearest Claudia, sadly...even tho I lived next door, I never had the opportunity to sit at your beautiful mother's table. Your amazing parents were always super nice to me as a young mischievous boy and I probably should have snapped up one of their beautiful daughters! LOL Fortunately, I found a sweet and beautiful wife. Sadly, she is not a cook, but Lord knows she is amazing at everything else. Accordingly, I do most of the grocery shopping and all the cooking. I enjoy it when I have time and hope to learn even more after I retire in a year or two or three... I was blessed to grow up next to you and your family. Pray that life is as good for you and as it is for me. Keep giving us all help in learning the REAL ways to cook. My mom was amazing, but totally different style. Keep it coming!

Marinara refers to the Italian fisher men who made this simple sauce for their meals when they were away from home. There is no seafood in it. Quite a few of my Sicilian family were fishermen and their recipe was simple. Olive oil, garlic, tomatoes, salt, and basil. Nothing else. Certainly no onions, oregano, sugar, etc.
