As a retiree who had a Mom and Dad who grew up in the depression but have been gone for many years love your stories they bring back many memories of my Mom who loved to talk about her childhood, the youngest of 10 and her father died when she was 11 months old but she had many good memories.

We used to give the vegetable peels to the chickens when I was growing up, on the farm. But then we always had a 50 pound sack of Long Island potatoes in the cellar. My favorite comfort soup, perhaps no surprise growing up with all those local spuds around: potato soup! Dad's recipe, handed down from Grandma, who was of Welsh extraction. Nothing more than potatoes and onions in water, then a can of evaporated milk to make it creamier. I now usually add a few slices of white American cheese and one of yellow (for color) instead to achieve an even creamier result.

We leave it chunky, by the way (the pot is mostly filled with solids), but you could puree it a bit if you like. I cook it enough that the edges of the potatoes break down and thicken the soup a bit.

Always happy to find great soup recipes this time of year!🍲 Economical, too!👍 Here's another simple one that's great for autumn: Broccoli Apple Soup: 2 T butter 1 diced onion (medium sized), or more if you like 2-3 diced apples (I like a mix, with at least one tart, like a Granny Smith) 1-2 broccoli stems, florets separated from the stem, stem peeled if woody*, then chopped 1 qt box of chicken broth 1-2 t ground coriander Dollop of sour cream or creme fraiche to garnish (optional) Salt and pepper (I use white pepper here) to taste Note: You can also slice everything thinly on a mandoline to speed up the cooking a bit. *Important! Cut away all the woodiness, so that the soup will be smooth, and not spiky, once pureed. Steam florets separately, then shock in cold water to set the color; set aside. In a 3 or 4 qt saucepan, melt the butter. (Note: If using the larger range of solids listed above [onion, apple, broccoli], or an immersion blender to puree, use a 4 qt pot.) Add onion and saute over moderate heat until they start to wilt a bit. Then add apples and a bit of salt and (white) pepper and continue cooking until they soften. (Be careful--you don't want anything to brown!) Add the broccoli stems and sautee a few minutes (to warm), then add the chicken broth. Rinse the box a few times with water and add to the pot, so you have closer to 2 quarts liquid in total. Raise the heat, bring to a boil, then lower to a vigorous simmer, until the veggies are completely softened, but still retain green color, about 10 minutes. Close to the end of this time, toss in the ground coriander, and about half of the reserved florets, to heat them up again; these will be pureed into the soup. Be careful to maintain their green color. Remove soup from heat and puree, either in small batches in a blender (to allow for steam expansion--be careful!), or right in the pot with an immersion blender. The immersion blender is easier, but the regular blender gives a smoother result. Taste, and adjust seasoning (salt, pepper) if necessary. Soup is ready! Dish up and garnish with reserved florets (that have been rewarmed), dollop of sour cream or creme fraiche (optional), and/or another sprinkle of ground coriander over the top. Enjoy!
This looks so tasty. I've never done this, but I have put potato peelings crisped up in the oven with oil and salt. Makes a tasty snack. Now that I know about potato peel soup recipe, I can use them in another way to use what I have. Thank you Grandma Feral. 🙂💗🍲

My mom born in 1925, would not eat the peel on a baked potato, I often teased her, she'd say to me " alright Doddy, I'm an adult now and I don't have to eat them", lol at which we'd get a good laugh. I was born on 1945. A friend, her family peeled the potatoes kind of thick, saved them and made f.f with them, I've never tried it. I am going to try you soup, thanks for sharing, God bless.

I simply love that I have found out your channel. This is totally my vibe. I have always believed that we throw many things away while cooking that are actually food! I have developed some recipes (if you want to I can share with you my banana peel cake - it's delicious and nobody says it is made only from the peels). Other things that I've been using are the watermelon white part, for example: you can make delicious salty and sweet dishes! This is something I am really into! Teach people on how to stop throwing things away! I live in the south of Brazil and I have a theory about some habits: in the past, people used to live on farms, or small farms, and they used to grow chickens, pigs and other animals, so they used those parts of the vegetables (peels, etc) to feed the animals. We don't have those animals at home nowadays, but, unfortunately, we haven't incorporated these parts in our diet. This is what I am trying to do. If you blend the peels of 2 or 3 bananas (I like to use coffee instead of milk in my cake recipes) and add this to the batter, you will have a wonderful banana cake. Take my advice on that! It is absolutely delicious! Ah! To me, bananas and cinnamon go well together so, if you want to, add some.... Hugs and kisses from Brazil.

Wow! Tomorrow I will make hash for breakfast and have been pondering: To peel or not to peel, That is the question. Now I will and save the peels for soup.
New subscriber today. Just a few thoughts for people trying to feed their families. Since you will blend the finished soup you could use carrot peels diced up. I personally never peel my carrots. Loss of too much nitrients & fiber. Also a few wild greens can up the nutrient content. A few apple peelings will pair well with the potatoes, not too many so not to over power the potatoes. A good cook can use just about anything to make a tasty, nutritional dish for the family. God bless.
To save on butter,sauté in bacon fat, it also adds more flavor. For students who might not have the extra equipment, cut your potato skins up before you start.
No salt added? This soup looks great, my Grandmother used to tell me after WW2 and when she used to get potato peels of the US soldiers that were stationed in the US part of Germany. Also sometimes to get the potato peels I think she had to give "services" to the troops to feed her family.

Looks great, Alot of nutrients with the potato skins. The colour looked amazing, I add a lot of smoked paprika and pepper to everything so this seems great for winter. I wonder how sweet potato skins would go.

Thank you for sharing other options to puree the soup without an immersion blender. Next time I peel potatoes I will save them to use in this recipe. I was also thinking that maybe if you added a little less water and made it very thick, it could be used like a gravy or sauce?

I was like this is ez then the "immersion blender" that didnt exist in the depression like I got one of those lying around...looks like its the strainer or mash TF out of my soup. Blender and reheat maybe? IDK just feel if its a depression era recipe we would see how they did it then too
Hi if your potato peels are not discolored they should be fine. I make my soup the same day I peel my potatoes. If we don’t have the soup that day I refrigerate the soup and have it the next day. Have a nice day❤️Grandma👩🏻
So I’m just wondering, in a lot of your dishes I see your hardly use salt, is that because they didn’t have that really in the depression era? (I love salt, which is why I ask)
The reason I do not add salt is because when my Mom got older I cooked for her and she had to have a no salt diet. We got so use to not having salt that we dislike it in our food. I do keep a salt shaker on the table for anyone that would like to add it to their meal. You would be surprised to see the high amount of salt that is in prepared foods. If you love salt you can add it to any of the meals I posted on my videos. Some of the depression era recipes did not have salt. Thank you for watching and have a good day👩🏻

New subscriber today. Just a few thoughts for people trying to feed their families. Since you will blend the finished soup you could use carrot peels diced up. I personally never peel my carrots. Loss of too much nitrients & fiber. Also a few wild greens can up the nutrient content. A few apple peelings will pair well with the potatoes, not too many so not to over power the potatoes. A good cook can use just about anything to make a tasty, nutritional dish for the family. God bless.

To save on butter,sauté in bacon fat, it also adds more flavor. For students who might not have the extra equipment, cut your potato skins up before you start.

No salt added? This soup looks great, my Grandmother used to tell me after WW2 and when she used to get potato peels of the US soldiers that were stationed in the US part of Germany. Also sometimes to get the potato peels I think she had to give "services" to the troops to feed her family.

Looks great, Alot of nutrients with the potato skins. The colour looked amazing, I add a lot of smoked paprika and pepper to everything so this seems great for winter. I wonder how sweet potato skins would go.
I have never made the soup with sweet potatoes. Next time we have sweet potatoes I will have to try making it with the skins and see how it turns out👩🏻

Thank you for sharing other options to puree the soup without an immersion blender. Next time I peel potatoes I will save them to use in this recipe. I was also thinking that maybe if you added a little less water and made it very thick, it could be used like a gravy or sauce?

I was like this is ez then the "immersion blender" that didnt exist in the depression like I got one of those lying around...looks like its the strainer or mash TF out of my soup. Blender and reheat maybe? IDK just feel if its a depression era recipe we would see how they did it then too

Hi if your potato peels are not discolored they should be fine. I make my soup the same day I peel my potatoes. If we don’t have the soup that day I refrigerate the soup and have it the next day. Have a nice day❤️Grandma👩🏻

So I’m just wondering, in a lot of your dishes I see your hardly use salt, is that because they didn’t have that really in the depression era? (I love salt, which is why I ask)
The reason I do not add salt is because when my Mom got older I cooked for her and she had to have a no salt diet. We got so use to not having salt that we dislike it in our food. I do keep a salt shaker on the table for anyone that would like to add it to their meal. You would be surprised to see the high amount of salt that is in prepared foods. If you love salt you can add it to any of the meals I posted on my videos. Some of the depression era recipes did not have salt. Thank you for watching and have a good day👩🏻
