I was able to watch today without much issue! Just FYI you don't need to use a sieve like that. You can use a full size colander and several coffee filters to strain! That's what I do! You get it done faster and easier.
I use a special strainer with a collection base for my yogurt. I bought it years ago on Amazon. It works great. I just put my fresh yogurt in it and put it in the fridge to let it drain and it separates the yogurt and the whey.

Store bought kefir will not thicken and set up like homemade kefir will when making cheese. But you have so many additional strains of good bacteria in homemade kefir so the added benefits are worth it, I think!

This kefir cheese, is the same with ricotta cheese? I'm not familiar with cheeses. How do you store the cheese, if you have a lot kefir cheese. And how many days it can last long. Can these cheese use to any baking that use regular cheese? Thank you for sharing your video. More please ❤😊
Kefir cheese can be a good replacement for ricotta cheese, yes, as well as sour cream, cream cheese, and Greek yogurt. I store my kefir cheese in a glass bowl with a plastic lid. It lasts for a long time. Weeks, even months. As long as there’s no sign of mold or discoloration, and it smells normal, it’s fine. The cheese will continue to culture in the fridge just at a slower pace so it may grow more potent in flavor, but it won’t technically spoil due to the fermentation process. Kefir cheese is not a substitute for just any cheese though as far as taste goes. It’s equivalent to soft cheeses and may be substituted for those most easily. Hope that helps!

I just made a normal batch of kefir, and took the grains out after a 24 hr fermentation period. If I overferment on accident (or on purpose), it would be a fermentation longer than 24 hrs and then I’d separate the grains from the kefir. Then I dump the kefir in a strainer to make the cheese. 😊
You may experience some constipation when you first introduce kefir or kefir cheese unless you start with a small amount and increase over time in which case you shouldn’t notice any constipation. (For example, start with 1/4 cup of kefir a day and work up to 1 C a day or whatever you feel like your body works best at.) Make sure you’re still getting enough hydration. Most Americans are dehydrated and constipated as it is…IBS aside. In general, kefir and kefir cheese should actually help with constipation and IBS (unless you’re lactose intolerant), but everyone’s body is a little different with how it handles kefir. Always recommended to check with a medical professional if you have concerns about introducing a new food with your condition.

Put the filter on the full jar. Secure with rubber band. Then flip the covered jar on the strainer. No need to keep refilling the open filter.
