I enjoyed the video and will be doing this soon. I was surprised that more liquid wasn't required, most recipes I've seen for the Kazan require a significant amount.
I've found pork puts off an enormous amount of liquid, no matter how I use it. I've pressure a pork roast with no liquid at all to start and it ends up swimming in liquid.
I cooked it about 10 minutes after it came to pressure. If you've never used a traditional pressure cooker, it works without all the liquid that's needed for say, an Instant Pot. That said, the sauerkraut has a fair amount of liquid inside of it and pork actually lets off a TON of liquid. Even with an electric pressure cooker, I find I don't have to add much liquid when cooking pork. I have a video of this in electric pressure cooker lined up at some point. To make it happen, you'll have to add a 1/2 cup of liquid, water, beer or apple juice. Pressure for 25 minutes, 15 minutes natural release.

This came out better than the first one. That brown chicken brown cow is where it's at. I bought it at the butcher shop thinking it was a rub ..if I had known it was just a browning seasoning I honestly wouldn't have bought it. I'm glad I screwed up! it's got a ton of flavor and it also makes for some good gravy. I hate that Mengrills is out of stock on the pot right now. This makes for terrible timing putting out this video.
Yeah, look up choucroute, it's the original classic version, pretty much fancified from country home cooking versions which are ancient, based on preserved cabbage and whatever you had to throw in.

Until it's tender. This took about 45 minutes, but if you have one of these pots, please do not use it. Discard it or use it for decoration. They have taken it off the market and recalled due to lead. If you have an Instant Pot or something similar, you may have to add a bit of broth to the pot and pressure for 25 minutes with a natural release. If you have a traditional pressure cooker that uses the stove, you're on your own. I haven't tried this particular recipe with a traditional pressure cooker.
